- Zurek, also known as Zur, is one of Poland’s most popular soups, particularly beloved in the region of Silesia. Often referred to as Polish Easter soup, it is enjoyed throughout the year. We went to Katowice and visited the Żurownia restaurant to learn more about the art of preparing Zurek and the pivotal role played by its key ingredient: sourdough.

Fantastic soup! I‘m German, but with ancestors in Poland, Lithuania and Ukraine, so it survived as kind of family recipe.❤

@@Pantera1001yep, thanks, I messed up. 😂
Stockholm, Sweden here. I often go to Poland for this, the best soup in the World...and the Golonka of course❤❤❤
Żurek, king of the soups and as far as I know actually endemic to Poland. As a generally non-soup guy, this and the chicken broth (rosół) are so awesome that I can't stop eating them. Plus, both work miracles for hangover ;) I really wish Poles would open more restaurants with żurek, pierogi and zapiekanka stands abroad, I miss them often. It might be the most succesful way to spread one's culture in a very pleasant way :)
I have a friend in Dublin, whose maternal grandparents were German (from a part of Germany that is now part of Poland - I think Silesia?) and he makes something like this - but with the addition of Cayenne pepper - every Easter.
Very tasty 🤤
Their ancestors were probably germanized silesians.
At 2:27 he mentions Silesia!
Silesian żur is stronger than Greater-Polish żur (żurek), but without the white sausage and egg.
Delicious 😊many families add “white” sausage instead of the smoked one.
Then it's a barszcz biały I think
No, barszcz bialy is made of wheat flour, and żurek - rye flour.
Could you please put a recipe in the info? I am sure the chef will be happy and proud to see it published. It's way easier than to extract it from the transcript. Thank you!
I don’t eat meat during Lent.
Also me: I will have a soup with sausage, bacon, ham, and eggs. Cheers.
;d
This soup is commonly eaten on Sunday, during a family dinner. You can eat meat there
@@zosiazaremba7479you CAN eat meat anywhere and anytime
@@Lividbuffalo I mean yeah, but it's a tradition (at least in Poland) that we fast only on Good Friday and Ash Wednesday

What's your favorite Easter dish?
Here it is! Aweome to see this video.
Żurek is definitively the favourete dish, altho another staple on my family's table has always been egg paste which is then spread on top of freshly baked bread. Very iconic, with an addition of horseradish.
Monkey bread for Easter brunch.
For Germans we have a soup called czarna polewka.
burning an onion to flavour soups is such a Polish thing! We do it in many soups!
How did potatoes reach Poland for the first time...?
Through Germany, in the 18 century :)
We figured, that you can make vodka out of it ;)
Potatoes are native to South America . That’s where they come from
Soar? For me it's peppery spicy.
That's true. I haven't eaten better soup in the world.
Żurek isn't Żur, Żurek is whole poland Żur like soup, Żur is traditional silesian soup.
potato soup?
Polskie danie tlumaczy Ukrainiec 😅 Gdzie biała kiełbasa?
To samo było z pierogami - opowiadała o nich Ukrainka/Białorusinka.
Well spotted! In both videos we filmed with chefs who are originally from Ukraine and have been working in Polish restaurants for many years. Just goes to show that Ukrainian chefs are cooking up some great food in Polish restaurants. And we felt it’s also a testament to cross-cultural influences between the two countries' cuisines. Cheers to celebrating diversity in the kitchen! 🎉
@@goennaberlinGreat job! I noticed this as well. It's lovely when people who came from another place may not only successfully incorporate into society but furthermore, they become it's good members. In fact, western Ukrainians love zhurek, too. Same as Slovaks. Like pizza, this dish becomes international. While traveling through Poland I use this occasion to taste zhurek or flaky, another polish/ukrainian soup.
Thank you 🙏 and thanks for sharing your experience - precisely! And it’s also interesting to see how cuisines evolve and different cultures inspire each other, so much to discover. I have yet to try Flaki. Is there any particular dish from Central Europe you would like to see on our channel?
A co za roznica? Pracuje w Polskiej restauracji.
0:22 the guy isn’t even polish…
What kinda lent use meat lmao
I disagree. Italians have pizza, Polish have zapiekanka!
It is not a popular soup in northern Poland. Tomato soup, beetroot soup, broth is more popular
I'm from pomerania and i grow up wth żurek!:)
Zurek is a polish traditional soup , bud the Chef here is Russian 😉
Ukrainian, most like. Nothing strange, Ukrainians integrate very well in Poland.

Is it halal? We need to know modern Germany is changing.
Halal? What for? You want a halal version of a Catholic dish? Get the recipe and adapt it.
Poland doesn't give a fk bout halal
Polish halal would be good ✌
So Prussian dish with lithuanian name is now a soup eaten during Easter. Or you could go to the Chinese, Korean, Japan place to eat miso, kim-chi, wonton since we knew those before all of you.
To danie jest polskie misiu.😛
Yeah, Prussian. Sorry, it's a miss - żur, kyselo or kisjalica is very old and certainly not Prussian. And we knew those before all of your miso, kimchi or wonton. Try harder next time.
@@PrzybyszzMatplanety Oczywiście masz rację if you say żur, żołd, żołnierz, żalnik they all Prussian and they are all Polish words but not Slavic. Every Pole knows that.
You have no idea how wrong you are. The Prussians, apart from nice places and cathedrals, brought oppression and destruction to the Polish culture.
Most traditional soup in poland was created in attempt to make worst soup in a country, why am i not surprised at all 😂😂
None of this or decoration s or traditions repetitions rituals deviations or matters only Jesus 👑 does ! Why you ignoring most Precious matter?
Polish Easter and Christmas traditions are devoted entirely to Jesus. During Easter, we bless food (different foods symbolise different things) in a basket in a church. We fast and attend mass.
Stop saying "like" chef.
For non English speakers, that is a verbal filler whilst they try to think about what they want to say. It isn’t that he is trying to sound like a Valley girl from California. Instead, he should learn it is okay to pause and say nothing then continue speaking. It also could be nerves. Be kind instead of critical.
@@kscptv I lived in Italy for 10 years, never said "Boh" every few words. I could barely speak conversational Italian and even I knew not to do that. It's no different than "Ummmm". Don't do it, regardless of the language.
