    I live in Atlantic Canada, we just use mozzerella in place of cheese curds, it's practically the same thing.

    I will definitely try your gravy recipe! I'm lucky enough to live in Quebec and two restaurants near me make keto poutine with celery root and rutabaga. But the homemade version would definitely be cheaper for sure! Plus, I'd know everything that is in it. Thank you! :)

      Ohh, I’m gonna have to try it with celery root. Can’t wait to visit Quebec, next summer! 💜 If I’m making gravy for steak etc. I tend to make a much fancier version. But this recipe is so great to whip up quickly for dishes like this or to serve over mashed cauliflower.

      @@tommylumia1 Chef Fred poutinerie in Matane and Mont-Joli. I think they have keto poutines at La Belle et le Boeuf too, but we don't have that chain here. They are closer to Montreal.

    It looks delicious! Another dish tempting me to make an effort at deep frying. What's cheese curd like? Is it similar to halloumi or paneer?

      Yes! North American Cheese Curd is very very similar to India’s Paneer Curds. When they are freshly made, they have a squeakiness to them and are a bit salty tasting. Speaking of halloumi, I want to try frying some!

      @@SuzAndTheCrew I love the texture of halloumi and paneer, but I find the halloumi here very salty. Paneer is very milky and tastes unsalted (the ones I've tried anyway), makes me want to put it in a dessert of some kind. :D

    Do you think this would work with an airfryer?

      I do! You would probably have to do a smaller amount at a time, coat them lightly in avocado or extra virgin olive oil, set temp to 400 ish, and then experiment with how long to cook them to achieve right texture. I plan to try rutabaga fries in the air fryer soon but have had good results making them in oven, it just takes like 45 minutes to an hour to get them soft on the inside and crispy on the outside. The air fryer would probably be much quicker!
