So, you inspired me! I am kind of a fresh food snob and I have a tendency to reach for all fresh veggies and meats before I’ll grab a can or a pantry staple. So I got inspired by your video and I grabbed a can of chicken breast meat and a couple bags of rice sides that I’d gotten for donations. I drained the chicken, added a bag of frozen peas and carrots and the 2 bags of “rice sides” and added about 6 cups of water and a half block of cream cheese. I spiced it up with some bullion and spices make it delicious and we are enjoying this chicken rice stew over some biscuits! It’s delicious! So thank you for helping me get outside of my box!
I hated rice growing up and only started eating it when I lived in Korea, so I still only buy medium grain rice, which is what’s popular in Korea. Usually the Calrose variety is what you’ll see available here in the US. As many Koreans do, I mix white rice with various brown and/or black rices. A mix of equal parts white, regular brown/black, and sweet brown/black rice is mostly whole grain but has better taste and texture than plain brown rice.
I just made the Garlic Parmesan Chicken and Rice with brown basmati and it was fabulous! My husband even claimed the leftovers for his lunch the next day! Thank you for constantly providing delicious, accessible recipes that are interesting without being too exotic or expensive! I LOVE your channels!

I always add diced onions. Season to taste with salt, pepper, and garlic powder. Cover with foil and bake at 375 degrees until chicken is done. The chicken juices, as it cooks, flavors the rice.
These look super tasty! I also make Salsa Chicken in the crockpot (chicken breasts & salsa) and serve it over rice. Leftovers make awesome chicken quesadias!

I make a french onion chicken and rice that is basically your mom's recipe plus a packet of lipton French onion mix! Top with whatever cheese you prefer! So good!!

Adding first two to my February meal plan! I love them both and I have already diced chicken in the freezer. We current have Aldi white rice, basmati rice and some brown rice. I think it does matter on the menu to go with it.

Little butter and some Italian stewed tomatoes on top is a go to side in my house. These were such a unique take on this classic dish and I always have rice and chicken it seems. I'm a Jasmine Rice girl. I use Arborio rice for Cuban chicken and rice. I keep long grain in my long term food storage and wild rice for a few specific dishes including soups. When it comes to Brown rice I like the minute rice version better than just the regular brown rice...I know a little strange huh! All the recipes looked great!
I recently made chicken taquitos with spanish rice & beans. You'll laugh when you read this but Dad ate bowls of beans back to back, while my nephew ate the rest of the rice and taquitos! So, no leftovers at all! I made another pot of beans the next day? And they ate that again! Lol! At least no one went hungry over the weekend. 😀

For my keto peeps who might not have half and half... bump some heavy cream down to 1/4 cup and add 1/4 cup water! Half and half IS HALF milk and half cream... I sub recipes like that all the time and never have an issue! Mindy this might be happening this week! I have it allllll in my fridge right now!
We tried the buffalo chicken and rice tonight and it was a big hit! I followed your recipe almost exactly. The only difference was that I had some boxed chicken stock in the fridge that needed to be used up, so I substituted that for the water. I look forward to trying the others now! Thank you!

I prefer jasmine rice. I just really like the flavor. I will use plain white rice if I'm making spanish rice. But for the majority of my meals with rice it's jasmine. Those recipes look good! What did you think about the plant based butter?
My family are from the Caribbean, we did not use creamy or cheese dishes like yours with our rice, but use a lot of your basic Sofrito and Sazon with Annatto seasoning. We prefer the Parboiled rice moist but dry at the same time to cook Rice with chicken...The only way we eat creamy rice is on Sweet versions like Arroz con leche (Rice pudding) or Arroz con dulce (Sweet Rice with black raisins)...BUT love your Cauliflower Rice....

My favorite go-to rice to have on hand is jasmine rice, which we eat a lot of, so we have been buying at Costco. We have some form of chicken and rice at least twice a week. Btw, love that sweater!

Chicken and rice is our favorite comfort food! I do mine in the oven as a casserole. Preheat to 375. Mix together in a large mixing bowl 1lb diced chicken breasts, two cans condensed soup of your choosing, 2 cups milk or water, 1 bag of frozen broccoli or veggie of your choosing, and 1 whole box of Uncle bens rice and seasoning packet. Pour mixture into greased baking dish. Top with shredded cheese and French fried onions. Cover with foil and bake 40-45 minutes or until cooked through and bubbly. It keeps great in the fridge for a couple days. I like to prep this dinner in the morning when I have a busy day ahead. Then it goes out of the fridge and into the oven before dinner time. Yumm!😋

I have given up processed foods so no cream of soup for me, I enjoy it more on the stove top, you really get more flavor from the chicken
I'm from Louisiana. I grew up using parboiled rice bc it cooks up fluffy and doesn't get as mushy when we add it to Gumbo or red beans.
My hubby and both kids are all about the Jasmine rice! So thats our pantry staple.

I use a brown basmati in a vegan green split pea soup and it is fantastic. The flavor of the basmati mixes wonderfully with the split peas

I can't do blue cheese, but when I make buffalo flavor things I'll use feta cheese instead. It gives the tang without the blue cheese funk.
