Malaysian Mee Goreng | Dinner Recipe Ideas In Under 1 Hour

  • Don't have all weekend to prepare dinner? Sometimes you just want that quick and easy dinner to prepare and cook so why not make it delicious with Mee Goreng from my hometown Malaysia!
    Ingredients
    - 800g Hokkien Noodles
    - 400g Bean Sprouts
    - 2 Medium Potatoes
    - 400g Chicken Thigh
    - 200g Whole Raw Prawns (fresh or frozen)
    - 200g Fried Bean Curd (Sliced thin)
    - 8 Eggs
    - 1 Whole Eschallots (finely sliced)
    - 2 Cloves of Garlic (finely sliced)
    - Oil
    Chicken Marinade;
    - 1 Tbsp Light Soy Sauce
    - 1 Tbsp Chinese Cooking Wine
    - 1 Tsp White Pepper
    - 1 Tsp Curry Powder
    Wet Seasonings;
    - 4Tbsp Light Soy Sauce
    - 2 Tbsp Dark Soy Sauce
    - 4 Tbsp Tomato Sauce
    Dry Seasonings;
    - 2 Tbsp Curry Powder
    - 2 Tsp Sugar
    - 2 Tsp MSG
    Method;
    1. Cut potatoes into small cubes and boil in salted water, strain when slightly soft.
    2. Cut chicken thigh into thin strips, combine marinade ingredients and coat chicken in the marinade. Set aside.
    3. Mix dry seasonings and wet seasonings into their own separate bowls. Set aside.
    4. In a heated wok or fry pan, coat with oil and add 1/4 of the Eschallots and garlic. Fry for 30 seconds
    5. Add 1/4 of the quantity of chicken and prawn, fry for 1min (or until 50% cooked)
    6. Add 1/4 of your bean curd and potato. Add a teaspoon of wet and dry seasoning. Fry for a further 1min.
    7. Add bean sprouts and hokkien noodles, along with 1/4 of the dry and wet seasoning mixture. Fry for a further 1-2min.
    8. Push noodles to the side, add some oil to the wok and crack 2 eggs. Scramble and toss until the eggs are combined well with the noodles.
    9. Serve up and enjoy!
