  • let's create a unique cottage cheese keto recipe that could go viral. How about "Cottage Cheese Keto Cloud Bread"? This fluffy and versatile bread substitute can be used for sandwiches, burgers, or even as a snack. Here’s a detailed recipe for you:
    Cottage Cheese Keto Cloud Bread
    Ingredients:
    1 cup cottage cheese (full-fat)
    3 large eggs, separated
    1/4 teaspoon cream of tartar
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 cup almond flour
    1/4 cup grated Parmesan cheese
1 tablespoon psyllium husk powder (optional, for extra texture)
    1 teaspoon garlic powder (optional)
1 teaspoon dried herbs (optional, such as oregano or rosemary)
    Instructions:
    Preheat the Oven:
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
    Prepare the Egg Whites:
In a clean mixing bowl, add the egg whites and cream of tartar. Beat the egg whites until stiff peaks form. This is crucial for the fluffiness of the cloud bread.
    Mix the Cottage Cheese:
In another bowl, blend the cottage cheese until smooth. You can use a food processor or blender to achieve a creamy consistency.
    Combine the Ingredients:
In a large bowl, mix together the cottage cheese, egg yolks, baking powder, salt, almond flour, Parmesan cheese, psyllium husk powder (if using), garlic powder, and dried herbs. Make sure everything is well combined.
    Fold in Egg Whites:
Gently fold the beaten egg whites into the cottage cheese mixture. Be careful not to deflate the egg whites too much, as they provide the light, airy texture to the cloud bread.
    Form the Cloud Bread:
Using a spoon, dollop the mixture onto the prepared baking sheet, forming small rounds (about 4 inches in diameter). Flatten them slightly with the back of the spoon.
    Bake:
Bake in the preheated oven for 25-30 minutes, or until the cloud bread is golden brown and set.
    Cool and Serve:
Allow the cloud bread to cool on a wire rack. Once cooled, they can be used immediately or stored in an airtight container for later use.
    Serving Suggestions:
Sandwiches: Use the cloud bread to make your favorite keto-friendly sandwiches.
Mini Pizzas: Top with keto-friendly pizza sauce, cheese, and toppings, then bake until the cheese is melted.
Burgers: Use as a bun for your keto burgers.
Snacks: Spread with butter or keto-friendly spreads for a quick snack.
    Tips:
For extra flavor, consider adding shredded cheese, finely chopped herbs, or spices to the batter.
These cloud breads freeze well. Simply thaw at room temperature or warm in the oven before serving.
This Cottage Cheese Keto Cloud Bread is a versatile and delicious way to enjoy a bread substitute while staying keto-friendly. Enjoy!

Dave, the one thing that you can do to keep the parchment paper in place is to throw some water droplets on the cookie sheet first and then the parchment paper will stay in place. I said droplets but you got to use a little more than that. Another way to separate your egg yolk from your egg white is to use a 2 liter bottle or 20 oz bottle or whatever some kind of a plastic bottle like that and just squeeze it with your hand and then put it up to the egg yolk and suck it right into the bottle. Hope you liked my tips and I look forward to seeing you use them in future videos. Keep them coming. 😊

    Cooking Hints:
    1) Crack eggs on a flat surface. When you crack eggs on the side of a bowl, it’s pushing the egg shell into the egg and then you get egg shells in the bowl.
    2) Salts are different from each other. Sea salt is different than the stuff in the blue canister. The density of the salts are different and you may have a saltier result or it might have deflated your batter.

You can seperate yolks from white by "pouring" the yolks back and forth between the broken egg shells while the white drips into your bowl. And beating egg whites don't get better or more stiff by continuing to beat them. Once they reach the point of stiff peaks, stop. If you continue to beat them they fall and will become liquidy.

You had some yolk in the whites at the very beginning, so they were never going to reach stiff peaks. Any amount of fat in whites, and it will not turn out, and they were deflating as they were sitting, and waiting…then your “folding technique”…well there’s that.🤣🤣Also if you don’t drop the eggs from so high, you have a better chance of not breaking the yolks.👍👍

Assuming the dough viscosity/texture/consistency is an issue in the future: Once you have the dough ready for the oven chill it in the freezer [not fully frozen but close to it] before you bake it for a chance to give them a uniform shape and put an egg wash on top so the outer crust looks more like the thumbail.

The cottage cheese one had flour in it that’s why it is thicker than the other one.

LOL! Use the right tools, read the whole recipe, before starting and follow it, as directed. ...Also, learn how to separate eggs. FYI - room temperature eggs versus refrigerated eggs...it does male a difference in achieviing stiff peaks! 🤣 🤣 BTW, Thanks for the cottage cheese cloud bread idea, it sound promising. 👍 😋

Judge it after the baking... I've made it before. But, since I haven't made it again, I must not have liked it. Maybe like cottage cheese version best. Flavor... 😋

Why did you toss the yolks? You could have made egg yolk waffles or crème brûlée or just scrambled them with another egg?
