How to Make Warabi-Mochi (Japanese Confectionery Recipe) 片栗粉で簡単わらび餅 (和菓子レシピ)

    わらび餅 (Warabi-Mochi) is traditional Japanese jelly-like Mochi-like confectionery (和菓子 wagashi). To make the authentic one, you will need わらび粉 (Warabiko / bracken starch). But many people in Japan enjoy making this with starch (potato starch or corn starch) at home, and it tastes as good as the real one!

    Warabi-Mochi
    Difficulty: SUPER EASY
    Time: 10min
    Number of Servings: 2
    Ingredients:
    A
    * 50g (1.8oz.) Katakuriko (potato starch) or corn starch
    * 2 tbsp. sugar
    * 300ml green tea or water *tea removes the starchy smell
    * a pinch of salt
    B
    * 3 tbsp. Kinako (soybean flour)
    * 1 tbsp. granulated sugar
    * a pinch of salt
    Kuromitsu (brown sugar syrup) if you like
    Directions:
    1. Mix A very well in a pot.
    2. Put on medium, stir constantly until translucent and thick. When it becomes completely translucent, stop the heat and mix very well for a minute to mix evenly and let cool until not too hot to handle.
    3. Spoon the batter into a bowl of ice water to cool completely. *DO NOT put it in the fridge or it will get hard.
    4. Drain very well and dust with B to finish.
    If you can't find Kinako (soybean flour), you can sprinkle with MILO :)
    You can keep it at room temperature overnight. Dust with Kinako (soybean flour) right before you serve.

    I used potato starch and it turned out perfect and i cooled the mochi in the fridge . I noticed that the mochi remains soft but the kinako powder becomes lumpy xD so i think the mochi can be placed in the fridge and then u put the kinako 😁😁thankss for the delicious recipe~

    I've tried a mochi recipe using corn starch and it becomes clear but it doesn't form the way potato starch does. It's much better with potato starch and I found it in the kosher section :)

    I tried to make this but I FAILED SO BAD!!! At least I think I failed. It was chunky, wet, and brittle (despite being jelly-like). The Milo coating ended up dissolving through the moisture of the warabi mochi. I might make this again, fingers crossed it ends up better this time.

    What is the different between Katakuriko and corn starch? Will the cooking temperature or the texture of the mochi be different?

    that looks good! thank you for sharing I would like to try this one. I might coat with powdered sugar, I don't know if I can find soybean flour or milo. I love mochi, but have not had luck making it at home. And I love your sweater :)

      The powdered coating gives the mochi a great flavor, maybe try sesame seeds? If you do have them, just put them in a food processor or blender for like 10 seconds and add a bit of sugar to the mix, then use that to coat your mochi :) I've also posted a link on your discussion page of a website that teaches you how to make mochi in the microwave, hope it helps you!

      ***** maybe the powdered sesame seeds would be nice. I will have to try microwave mochi again. It came out bad the last time i tried, but I think I didn't mix it enough. I have a mortar and pestle - it looks like fun to take out your stress. thank you for sharing that link :)

      Kelly Gorham Definitely try it out, remember to use roasted sesame seeds :) When I made the mochi, after the initial 3 minutes in the microwave, it didn't look right (rock hard surface and still liquid on the bottom) but don't be fooled ... mix it a bit and place it right back into the microwave for the remaining 1 minute and it'll turn out fine!

      キレイにするコツは汚れたと思ったらすぐに拭く事です〜。特に油は時間が経つと取れにくくなりますので。最初は面倒かもしれませんが、癖になると自然とできるので苦にならないです☆

    The Chinese version uses peanut powder mix with sugar to coat the mochi. I'm not sure what kind of starch people use to make Chinese mochi though XD

    I just tried it using cornstarch, but I'm afraid the consistency was not right. It never became elastic, no matter how long I cooked it... I ended up with some kind of goo, it looked more like custard than mochi :S I'll try it with potato starch in the future.

    yummmm! I love kinako :) now to pick of that up....if i don't have the brown sugar syrup can i just melt some brown sugar and boil it down to the syrup? Or can I substitute with honey?

    ***** san, I've tried to make it use instant coffee and it taste good. unfortunately it can't be kept for a long time. Better serve and eat immediately. The mochi will be watery and harden. even for 24hr.
