Thank you for the simple recipe. I have a question - is it sensible to hold the chicken by its head above water while boiling? The unboiled chicken head is dropped into the boiled water after switching off the cooking hub, then, the head and neck (uncooked) are discarded after 40 minutes. Would it be better for the purpose of food hygiene & safety to remove the head & neck and hold the headless chicken carcass using a piece of string during the boiling process?
@@jameshue55 thank you for the reply but the risks of contamination of bacteria from the undercooked, uncooked chicken head standing in hot water with heat turned off for 40 minutes makes this traditional method unsafe. My mother prepared 白切雞 when I was little. I remeber the chicken head was boiled in the water like the rest of the chicken before standing with heat off. Even so as a child, I had some reservation about eating the chicken meat that had bright red blood from the bones. Food safety is higher in my priority than presentation & appearance of the food. I beg to disagree with the recipe.

If you boil the chicken headless, the skin would shrink whereby it affects the cutting process and final presentation.
