Hey I just wanna say I'm french myself, I've been doing Bearnaise Sauce many times in the last 2 years and I can tell that hitting that consistency is crazy, it's a hit or miss for me everytime, especially as you start doing a bigger amount in one batch, what a texture from the third guy, mind blowing

You can use a small amount of water to loosen the sauce, once the emulsion is formed then you can force water into it to fix its consistency

@@GroundbreakGameswhere do you live in Canada if you don’t mind me asking? Where I live (Vancouver) most people always tip 15% minimum, only in cheaper bistro people tend to tip less (10%). I think it’s fair
@@KseRBanshee Yeah I have no idea what this comment section is on about. I lived in Vancouver and now live in Saskatchewan, and in both tipping is standard, 10% at the minimum, but usually 15-20%. I think the original commenter just had a very small sample size of bad tippers who happened to be Canadian, and then the person saying it's only a USA thing is just clueless

Can't disagree, the steak is the main portion of the dish, can't mess that up.
It didn’t look bad either, but they asked for medium rare and he wasn’t able to deliver.

7:40 Minutes in. I'd really like to appreciate this judge. You appreciate he has already learned his lesson and choose to commend him for what he has perfected. Building his confidence for future endeavors. Flawless execution and timing.
He also compliments the steak in a way too. Very gracious.
I love that instead of kicking him while he’s down, he actually tries to pick him back up to rebuild his confidence. All three judges saw massive potential in each of the three contestants and it showed.

As soon as they said the sauce was the most difficult thing on the dish, I knew they would give a pass to the guy who messed up the sauce. If the sauce is the most difficult part of the dish, you need to be able to handle the easier parts of the dish. Steak and fries needed to be good.
Bearnaise hardest thing, steak most important. You might get away with a non-perfect sauce but screw up the steak and it’s getting sent back to the kitchen
It's called "steak frittes" not "steak bearnaise"... the protein is the star in this dish, so you gotta get that right first off. The bearnaise is a condiment, no matter how difficult to make, it's an add on, not the star. I can choose to add the sauce, but my steak absolutely must be cooked right...most wouldn't send back an entire dish because of an improperly made sauce...but, if your meat ain't right(giggity), say goodbye.
The sauce is always going to be less important than the main elements of the dish since the sauce is optional. You might eat the steak and fries without sauce but you’re not going to eat sauce by itself.
Kayla got away with the sauce being great and steak good, Mike got finessed for his steak while the chips were perfect and Eric had good steak and chips
Eric wouldn’t have won the masterchef title but chef alvin being a great teacher made eric’s true culinary skill shine the most! His words guided him to success! And on the first day chef alvin knew he (eric) had the same hard life as an asian and knew if he just worked a little hard and pushed him he would succeed and eventually he did
Mike is such a humble great competitor. Him and Eric were awesome on this season. 👏

The béarnaise sauce is only not pouring out because they put the food into the fridge before they serve it to the judges. I remember reading an article about how things work behind the scenes on the show.
Yeah, that always bothered me. It's not like they're eating food right as it comes out. If they did, they'd have to stagger the cooks. Also, whoever goes first could have a huge advantage. Ask anyone who's let a steak rest a bit too long

I don't know what this show is or why this clip is in my feed or why I'm watching it at 2 am but I am intrigued lol. Bearnaise sauce is super tough to make but I gotta agree with this decision. You just can't mess up the steak. I have issues getting my cast iron hot enough sometimes bc how my stove is so I understand the struggle. I preheat my cast iron in the oven now and that does the trick. Now if I could just get a better exhaust fan so the smoke alarm isn't going off everytime I sear something lol.

I'm Asian and my family has always supported me in what I do and that's why I'm so scared of disappointing them because I don't want their support to go to waste. Him being afraid of disappointing his family doesn't mean his family is not supportive of him coming to the show, just like someone pointed out, it's more about the person than the family.
While true, it probably doesn't matter as much as all of us are making it out to be. As an Asian, it takes a lot to "actually" dissapoint our parents.

it's a good strategy of the judges to only comment on one thing. Imagine if one of them tore the whole dish apart only to find out another judge loved it. One of them would be a laughing stock.

I have never watched any Masterchef show before but I'm obsessed with this guy's videos. He looks very Korean to me so I am surprised he is Chinese.
Glad they didn’t make the wrong decision here. As a customer, I could do without the sauce since the main is the steak and the side is the fries. Nailing the sauce and the side but messing up the main dish just means the entire dish is ruined and needs to be sent back.
