      worked as a chef for 10 years . 80% of the people I encountered over that time were either heavy drinkers and/or did drugs. Party lifestyle for most of them for sure

      Full-time kitchen personnel are often like fucking pirates or traveling musicians/road crew man, work hard play even harder. Used to do it, it was all the fun in the world until it wasn't but I definitely couldn't hack it anymore after a few years. It's brutally hard and incredibly stressful when you go at it straight-laced and clean. Add in all the qausi rockstar party animal bullshit and then try to balance it with doing the job and being a professional while you are at it and it all eventually becomes impossible and something gives. Still love to cook on my own time and at my own pace for those I like and love but full service commercial kitchen work is firmly in my past.

    He did everything right. Except: Fry the onion and garlic. No carrot. Baking soda is optional. Don't use canned chickpeas. They don't work. Tahini sauce: Mix sesamepaste and yoghurt approx. 1:5, add crushed garlic, lemon juice and salt.

    I baked mine and it turned out great. Baked them at 200°C for 20 minutes. I can't eat fried food.

    Needs onion too! Love a good Falafel sandwich, it's actually my favorite finger food, despite the fact I am far from a vegetarian. It's definitely a quick lunch or snack kind of thing though. It's so filling if you try to stuff yourself on a bunch of it it will still in your stomach like a rock, haha!

      What a jackass I am, wasn't paying complete attention and missed the onion go in the food processor! I usually see/use it used as a garnish in the pita but incoporating it into the falafel itself is a great call. You'll get that awesome fried onion flavor and it will help keep the interior of the falafel from being too dry while also helping with the outside crust! Can't believe I never thought of that...

      So as he says, falafel sandwich, as in falafel in pita, is an Israeli dish.

      @@benjamine8387 Egypt does something called tamiya طعمية and not falafel. Falafel is hummus based whilst tamiya is bean based.

      altaher85 here we call both falafel, we stopped making this kind of falafel because a lot of Iraqi Jews who can’t eat it.

      @@benjamine8387 "Putting falafel in a pita is 100% Israeli" no it isn't lol. Everyone in the region eats falafel like that. I had falafel in Egypt wrapped in a pita, and every Lebanese restaurant I've been to does it like that as well.

      @@kobe24OBCity It's like how people pronounce tomato or potato different. Depending on where you are from and your Arabic/Hebrew dialect, the word is pronounced different. Trust me on this one.
