Shereen is a classic...poised, confident, funny and informative. Perfect.
Works really well without any booze too. Equal parts butter and brown sugar(4tbs) with a 1/4 tsp cinnamon toss in banana chunks for a couple minutes and add to ice cream. So simple but tastes to fancy

Dash the cinnamon into the flambe. It sparkles and seasons. When I plate, I do the ice cream first and drape the bananas over the top.

It is delicious. I made this last night at my neighbors house about two hours after we finished our Thanksgiving Dinner and everyone loved it. I didn't have any Banana Liquor so I went a tad heavier with the rum and I like to add fresh Ground Nutmeg as well as Cinnamon.

Use to make it table side and this girl is spot on! I came up with another while working in the restaurant! Use frozen or fresh strawberries, blue berries, razzberries. Follow the same recipe but omit the banana liquor and use Chambord instead. Fruit flambee and its wonderful!

Ripe rare too sweet, mushy & fall apart.
1-Use fresh & firm bananas.
2-Any liquor will do.
(you could even skip it!)
I prefer anything
orange or cinnamon.
3-pre-scoop and freeze your bowls, otherwise it gets too soupy.

When ur doing caramel don’t stir it. Just move the pan in a circular motion and those bananas are like mush. If u want to cook them soft but not mush use less ripe bananas they will cook perfectly.
I agree. First time I ever had it was at a local restaurant that had live Jazz. I was in secondary school at the time and didn't fully appreciate it. Ot wasn't until I was working and was sent to New Orleans on a trip that I understood how great Bananas Foster is. I had it in the French Quarter. Probably the best place to have it. Meeting Paula "Forever My Girl" Abdul back in 1989 made it truly memorable!!
since there's butter in the pan as she's melting the butter, it's ok to stir it. A dry caramel is also fine to stir. It's the wet caramel that you can't stir.
If you actually watch her caramel apple video (it's right before this one)- she makes a "wet" caramel and after incorporating the butter, she tells you to "leave it alone" (not stirring). So she knows how to cook/ treat the different caramels.

I prefer salted butter even if people swear it ruins recipes - but they've been happy as heck with my food when I was a professional chef. It also turns out I medically need more salt in my diet so that's a good excuse
