    INGREDIENTS
    • 20-40 chicken wing tips
    • turkey or chicken carcass trimmed of meat
    • 1 onion, root removed, cut into large pieces with skin
    • 2 garlic bulbs, root end removed
    • 3 carrots, , cut into large pieces with skin
    • 4 celery, cut into large pieces
    • 1 shallot, halved with skin
    • 1 piece of fresh ginger (about 3 inches)
    • small bundle of fresh herbs (rosemary, sage & thyme)
    • 2 tsp whole black peppercorns
    • 2 tsp dried oregano
    • 3-4 dried bay leaves
    • ½ cup apple cider vinegar
    • salt, to taste
    • a few quarts of water, to fill pot fully

    I have to say, it's so odd to see this now becoming a trendy food when I've been eating this since childhood. It's actually 2 meals here, bone broth which you can drink and holodec/holodets- when you pick off the meat, lay in a glass tray and pour the liquid over it and let it solidify, then eat it cold with mashed or boiled potatoes. Delicious, both of them.

    I love bone broth from a cooked whole chicken, carrot, onion, garlic, spices. Beef bone broth is also very nourishing.
    I'm in my 70's. My mom made chicken bone broth often and it was always a treat.
    She learned it from her precious mom.

      The bone broth made from chicken and turkey bones is better for your joints because of the type of collagen in those bone versus beef bones. 🦴

    After straining, how long do you let it simmer before reducing by 10%-15%?

      After straining, it is when I reduce it. Maybe 20-30 minutes on a low boil. Some people like their broth more condensed and will do it for much longer.

    Why not just let the broth cool down and the fat will automatically come to the top. If you then place in refrigerator the fat solidifies and you can then just take it all off the top. Your making too big a deal out of it.

      Unless there is copious amounts of fat I would just leave it in the broth. As my Gramma used to say that is just more flavour in the soup!
      But definitely it is easier to remove all at once if the fat has solidified.
