The end product is so simple and yet probably otherwordly in taste compared to our western döner shops. And yes that guy has probably turned into a firebender by now

Those aren't just chefs, they're artists. Absolutely spectacular.

Those arent even chefs. Those are cooks.
Chefs are the head of the kitchen, they create menus and manage the staff, often times have a sous chef as well under them.
This is not a video of a bunch of chefs managing each other, arguing about the menu since theyd each have their own ideas, and telling each other what to do. These are cooks cooking simple street foods using fairly basic methods.
Cutting and stacking meat, baking pita bread, cutting meat. Thats barely even cooking. Thats mostly just preparing. But yes, the production of this video is nice and makes a menial day job seem like something more interesting, and there is magic in that. I do agree.

@@robbob4872 nah, there are really good ones but also enough not so good ones, some are full blown restaurants as seen here, others are operated out of a container, sometimes the restaurant sized ones are trash and the container ones great. it is wild
In Germany, but also in some places in Belgium and the Netherlands, they use meat made and packaged in a factory, instead of fresh 100% beef meat you see in this video. Which is why I don't eat döner but opt for other meat instead when I go to the joint. It's very, very rare to find places in europe where they make their own meat. Instead they all use the exact same meat which comes from the exact same factory, and only cook it.
This is the best Doener / Shawarma I've ever seen. I mean, they make everything themselves by hand! I wouldn't be the least bit surprised if they didn't also grow their own firewood, mine their own metal for the tables and grind their home grown wheat into flour. Truly this dedication is what fascinates me about Japan for example, where this level of perfection is strived for to an almost extreme perversion. I am in love with just the thought of how it must've smelled in that kitchen. Uzbekistan, here I comeeeee!

Best part of the US is all cultures set up base here, great shwarma everywhere here
Most likely wont work for 2 reasons, hourly wage for your chefs and what would be the price to buy a stack of fresh meat like that in Melbourne? In nearly all of the big western cities prices for quality fresh meat is becoming just too expensive to make it lucrative and if you charge it through to your customers u wont have many sales because people will go buy a kebab next door where they use the premade frozen meatstacks for half the price.

Over the years people have become sick & tired of rubber like minced meat (2nd grade quality meats) produced to make kababs!
Rarely do you find fresh meats like that seen on CZcams, it’s all minced meat. You’re right about one thing, that type of meat(minced) is by far cheaper than the quality seen on CZcams !
However that shouldn’t be a deciding factor for business owners.
Some kebab shops have been ridiculed & fined for keeping selling kebab meats that should have been thrown away at end of business day, instead owners apply grease to dry kebabs & te cook the meats ( hence rubber like)

Я в 1985-86 гг служил в армии с узбеками - они все прирожденные повара, знают толк в приготовлении еды и любят это делать. Сам видел , какой они плов делали на полигоне прямо - это что-то (но для офицеров))

Так это все один фастфуд, +- одинаковое качество. Своя домашняя еда здоровее, но с городскими продуктами и то недалеко от фастфуда ушла. Чтоб вкусно и полезно питаться нужно жить в деревне и своим хозяйством владеть, тогда можно получить почти гарантированное качество при условии, что хорошая почва и никакой химии для борьбы с вредителями.

@@xaero9361 я был неоднократно в Средней Азии и там ни разу не столкнулся с такими проблемами, наоборот самые лучшие воспоминания о лагмане, мампаре, мантах и прочих вкусностях - все было самое свежее и вкусное, шашлык из свежей бараньей печени ммм вкуснятина.
Первый раз вижу шаурма из говядины. Была во многих странах, шаурма баранина и курятина. Молодцы.

I spent some time in Germany in 2014 and had a Doner for the first time... THEY ARE AMAZING. Wish I could find them in California.
Looks delicious. The mistake a lot of kebab houses make in my country is putting no thought into the bread and just assuming people will put up with substandard frozen pitta because they pile the meat high. The only change I'd make to this beautiful looking kebab is 25% less meat and more fresh salad. Red cabbage, onion, tomatoes, cucumber with a nice olive oil dressing. Loved watching the process, keep up this fine craft :)
