John, I just wanna say I've been watching you for like, 7, 8 years? Even when I could still barely cook. You've been a huge guidance to me especially in my discovery phase teen years 🥹 your content is great and your format is so relaxing! easy to understand for beginners and more experienced cooks, nothing excessively complex, and just in general such a welcoming vibe!
Why do every time I watch you cook, I feel like going and getting stuff I don’t currently have and eating food I don’t currently need! But wow, you make stuff look sooo good and so easy! Very thankful.

I’m personally don’t make Alfredo with cream, just Parmesan, butter and pasta water, I’ve never found it lacking in creaminess or flavour, may I ask why the addition of cream? It’s not how it’s normally made and just seems to be a bit decadent for no real reason.
Give it up already, you're not the first food purist who has cried about cream in Alfredo.

Why do Italians make the Alfredo sauce only out of butter,starchy pasta water and Parmesan?
They never add the cream!
I have no idea why, but while this type is delicious, I too prefer the Italian way. I think cream makes it way too heavy.
It's the correct way to make Alfredo sauce, that is why. Alfredo di Lelio popularized it in his restaurant in Rome. He'd toss the fettuccine with the pasta water cheese n butter at table side. The tossing creates the creaminess. No heavy cream. Francesco Dama has a nice article on it in Italy Segreta. Also Max Miller on Tasting History here in YT has a great episode on the history of it. Xx
