I keep mine in the original bag, roll it closed and then put that in a resealable bag.
Where I am from we use brown sugar in daily foods, juices and teas and hence it is stored as you would atote rice or flour-in a jar

Jessica, this is the exact information I was hoping to find. As a "food scientist" I entirely & unquestionably trust your guidance. In terms of storage ideas, what would you recommend for storing Powdered Cheddar Cheese to prevent clumping & hardening? More specifically Hoosier Hill Farm brand. Even my Vitamix won't pulverize the clumps. đ˘
I do: roll bag airtight as possible. Place in another slightly larger bag. Place a small moistened sponge in the outer bag. Careful! Not too moist! Ceramic savers are nice but not very effective in every situation. Got mine from Publisher's Clearinghouse.
Where did you get the terracotta disk? I was gifted one that was apart of a container but it broke.
How long does the Terra Cotta disc keep the sugar fresh? Is it long term

Or just get some molasses and make brown sugar when you need it.
That's what I've been doing, but I make a bit extra (2 cups of light or dark at a time). I then just store it in a Ziploc in log form like in the video. It's a decent arm workout too since I just do it with a rubber spatula in a large bowl. The aroma and taste is so potent, it's nice.
I'll just stick with white sugar. It's cheaper and you don't need to do any maintenance.
