Ying and I landed in Singapore, and we quickly stopped at our hotel to drop off our main bigger bag, and then after that we headed straight to Little India to eat at The Banana Leaf Apolo, which is one of the legendary restaurants in Singapore that serves the dish. Fish head curry has an interesting and unique history in Singapore… it’s said that there was an Indian chef who had a group of Chinese customers that he needed to cook for. He knew the fish head was a delicacy in Chinese culture, and so he decided to cook a fish head, but use Indian style curry. His idea went perfectly, so perfectly that today it’s one of the main iconic dishes in Singapore, and it’s the single handed dish that I would go straight from the airport in Singapore just to eat - which is exactly what we did.
The Banana Leaf Apolo is a longstanding south Indian restaurant in Singapore, and although they now have a couple of branches, the old main branch is in Little India along Race Course Road. They have a full menu of different Indian dishes and they also have a cabinet full of pre-cooked dishes to order as well, but it wouldn’t be right to go there and not eat fish head curry. There were a couple of different fish head sizes, but I couldn’t resist ordering the biggest size. The fish head curry was excellent, and it wasn’t too oily or rich. Instead, it was almost like an incredibly spice filled broth, it was both thin and flavorful, and it went extremely well with the soft red snapper head of the fish.
I’m a huge fan of fish head curry in Singapore, and The Banana Leaf Apolo does a very good version of it.
    The Banana Leaf Apolo
Address: 54 Race Course Rd, Singapore 218564
Open hours: 10:30 am - 10:30 pm daily
Prices: Full menu range of prices, we had the large fish head curry and a few other dishes for $61.10 SGD ($42.57 USD)
How to get there: The restaurant is located in Little India, about a 5 minute walk from Little India MRT station.

Fish head is actually a pretty staple affair in the Eastern part of India, especially Bengal and Assam. One of Bengal's signature dishes is a "Muri Ghonto", which is a slow cooked fish head curry with spices, lots of dried chillies, hot pepper and and some puffed rice. We also have fish head with "Moong Dal", which is basically pulses cooked with a slightly pre-fried Fish Head, with condiments.

one thing I've noticed ~ When you taste if you close your eyes and tilt your head all the way to right and nod your head, that means the food is superb, if you just tilt your head slightly and nod your head, that means very nice, if you just nod your head means either not as good as expected or just acceptable... :P

I sincerely hope Ying eventually gets to eat - poor girl has to wait, videotaping Mark eating! I bet, she's right up there in terms of severe hunger pangs, ready to dive into that fish head!

Mark it is good to see you using your hands to eat south Indian food but use your thumb to get the food from your hands to your mouth so that you won't spill any food
