I'm late, but I don't think they caught the fact that: UI is not full power because Goku still consciously attacks, he has to do everything unconsciously.
Get this. Jiren is gonna protect Goku once at most. Because it seems like he’s in more interest than before now that Goku’s getting used to UI. He wants to fight Goku at maximum strength, not all screwed up and try to vulture his ass like the other universes. Just like Goku, Jiren has pride in fighting and likes to go all out and have the opponent do the same. That’s just who they are. But that’s just a Theory.

About the fusion I mean if you think about it I don't think I ever recall anybody ever destroying the earrings while anyone was fused, I could be wrong but I think Kelfa might be the first one where that happen but then again idk for sure they did say that for mortals it will only last 1 hour instead of 30 minutes unless you're God or unless out of the two people that fused one of them is a God then it's just permanent it was probably just for dramatic effect just to symbolize that they're both out but it also makes me wonder that if you destroy the earrings while a being is fused does that cancel out the fusion now ? idk🤔??? but then again Akira Toriyama does make up shit as the story goes along😂
