A very well-made and informative video and I have only one question. I have my grinder dialed in espresso and then set for pour-over without changing the fine setting = correct?
If you mean the micro-adjustment ring, yes, that's correct. You can leave the micro adjustment in place for your espresso and move only the macro adjustment to dial in for a pour over.

Hey there! For a Mokapot, 3.5 is a good starting point, and for an auto brewer, 5.5 is a good starting point.
It’s amazing to me that almost every video on CZcams does NOT do an in depth analysis on the actual function of this product. GRINDING. Can anyone show the quality of the grind at different settings???? It’s crazy. I would think this info would be pivotal in someone’s purchasing decision. Unreal.
