- The recipe of simple and delicious cotton soft sponge cake with vanilla chantilly cream (40 x 25 cm or 10 x 15 in pan)
6 eggs, separate egg yolks and whites
90g oil (1/3 cup + 1tbsp)
110g milk (1/2 cup)
2 tsp vanilla extract
165g cake flour (1.5 cup)
1/2 tsp baking powder
140g sugar (2/3 cup)
400ml cold heavy cream
40g sugar (3 tbsp)
1 tsp vanilla extract
strawberries for topping

I’m other words I basically just used a glass rectangular pan and it always comes out good! I said this a year ago and I’m still using it todya

I've made this cake a few times, and it's very delicious. It's soft, not too sweet, rich vanilla flavor. Just perfect.
Just a reminder to not line your mould. The cake shrinks if you do 😂. Learnt the lesson after twice fail.
what measurements of cake tin do you use and do you adjust the recipe? :)
@@jk6586 sorry, didn't notice your question before. I used 8 inch round mould, no adjustment to the recipe. Just lined the bottom, should not line the sides. Only then it rose & cooled very nicely. 😊

Hi, you can bake the cake in advance and keep (chill and airtight condition) for up to 3 -4 days. Whipped cream is best served right away but you can also keep it up to 3 days (chill and airtight too).

Depends on your round pan size but you could split the batter in half and bake it so you get two sponges. If they turn out thick just cut it in half and u’ll get 4 sponges. That would make a goood cake.

Take one cup of APF and remove two table spoons of flour from it and replace that with 2 tbsp of corn flour
