  • Man, fishing has been brutal all last two weeks. I've been chasing ghost king macks, and other stuff moving down the beach to a struggle. It's not as easy as striper lol! Decided to stay inshore and see what we could muster up for dinner.
    I worked jigs on the bottom and some stuff up high. Ended up with a mess of trout (mostly undersize) and a nice spanish mack.

    Speckled trout is my their favorite fish. My second-favorite is mangrove snapper and my favorite is hogfish. The fact that it's that far up on the list speaks for itself.

    Specs are delicious. You can't beat fried but there are lots of great ways to prepare them. I've had them as sashimi. Some people are not into that, but it is good. Vera Cruz is another great way to do specs.

    Love the channel man, but gotta up your coffee game buddy! Making you own concentrated cold brew with good coffee is easy: 1.5c coarse grounds, 2qt room temp water (plus a bit for loss to grounds). Let steep in roasting pan for 12 hrs and run through cheese cloth. Cheaper and better than drinking that stuff from the Empire! Keep the great vids coming, thanks for all the content!

    Specks are great sautéed in butter/garlic with either Tony’s or Old Bay. Grew up in Maryland and moved to Louisiana, so best of both worlds!

    Hey, Elias! I just found your channel last week and I’m very much enjoying catching up. Please keep up the good work!
    As bank fisherman using mostly dead shrimp way back in the day around Galveston, my dad, my brother and I were thrilled any of the rare times we could afford live bait and land a spec' or two. We usually had to make do with gafftops, croaker and sand trout (another kind of weakfish...bleah). We never bothered about any worms we saw in them: we just made sure they were well cooked. "Bonus protein!" my dad would say. You can’t tell they’re there if you eat them; no taste.
    Since then I’ve eaten just about every kind of fish you can catch in the Gulf and its bays (except hardheads), and speckled trout is still my favorite fish to eat. That nutty, almost peppery flavor is unbeatable. Please catch and cook more! And if you want to catch a real giant make a trip in the winter down to Baffin Bay, south of Corpus Christi. I caught my PB there 20 years ago, and it’s still the place to go for trophies, along with the Laguna Madre. Great places to get away in the winter.

    I agree, trout is one of my favorites to eat. They are great baked as you did, or fried and made into tacos.

    Fry in kerrygold butter! It’s so good! So are reds cooked that way. I agree. Better than red although I really like that too.

    Good luck on the fishing. Its starting to pick up more here in NJ, water temp slowly dropping, there is bait fish everywhere.

    I am going to have to agree with you in the following equation.
    If any-fish > flounder then crazy.
    Yep flounder is what i want and one of the major reasons i fish.
    After these storms i have seen a lot fewer bait fish(striped kill fish) around my neck of the Chesapeake (cedar point). The season for live bait might be close to done.

    Love the videos and your fish prep is starting to become fancy. It use to be just pan seared with salt pepper and butter...now lemons and sprigs of rosemary. Still love it. Keep up the content.

    I grew up fishing the Chesapeake bay and you are right about the big grey trout aka weakfish I am 50 now but when I was 15ish we could go out and get 40 or 50 8+pound weakies in a day no problem. Miss the old days

    I sure remember the tide runners. Caught them in the Delaware Bay. Age and health don't allow me to fish any more. I held the family record weakfish at 14 and three quarters pounds. I don't remember the length anymore. Keep on keep'n on Elias, love your channel.

    First time fishing w oldest was 5 (now 19 smfh) we used shrimp in Sanibel & ran out catching trout -7 keepers & bunch runts -released all no eats per kid lmao -vid reminded me that day -hope fishing picks up for u down there -have a great day

    Caught some specked trout down in Florida back in May just using croaker strip bait casting on top of some oyster beds. We caught a ton and fried them up they was delicious!!!

    It is hard to beat some Fresh fried speckled trout! You're right: They don't freeze well, but so good when freshly caught! White trout starts getting mushy not long after catching... You can fry white trout, but it needs to be super fresh...! YUM! :P

    Try Specks cross cut - dusted with flour- fried- then coated in apricot jelly(or some flavor) and a little hot sauce (many restaurants do this to flounder!) or try a oriental black bean paste! Awesome
    Look forward to stingray, mullet, and maybe eel on your catch and cook!

    One of the species I look forward to catching when I head to the coast. They are good fried as well. The recipe you used here looks very tasty. They also can easily be caught on live bait or lures. I'd say the one thing reds have over specks is they do fight harder, though the really big ones will give you some good action.

    The funny part is in Mississippi, at least back in the 90's, speckled trout were EVERYWHERE! You'd catch them in Biloxi Bay, you'd catch off the piers out in Gulfport/Ocean Springs.. they were freakin everywhere. Most of what you'd see inland were silver shad, buffalo, mullet, and your typical bass & bluegill.

    I grew up trout fishing in South Texas along the Laguna Madre. Most of my first fish fries we were with specs. Before the freeze it was no big deal to have 100 + fish in a weekend. Lightly fried it is good table fare for a group of people. It wasn't until I was older that I started baking it on the half shell or grilling it. And when you do fry it you want a very clean batter not a whole bunch of spice. My sister holds the family record of 36 in for a spec. My father told me he and my uncle's cleaned 300 fish that weekend.

    Get some House Autry seafood breader. Just dip fish in water and dredge in the breader, let it sit in the fridge for 30 minutes, then deep fry or pan fry. Absolutely delicious.🍻 Good video, brother. Cheers!👍

    Great stuff Elias...thanx for all the good info. I'm not a big fan of Starbucks either, but I do drink (black) their dark roasts...mostly their Sumatra. I buy some for work and home in espresso grind.

    Gave it your best E. Yeah - I might be 40 yrs older that you, but you've earned "Oldtimer" status. NJ weakfish went to 17lbs in the 70s.

    While the mullet are still running you should try and catch a few horse mullet and fry them up, they're excellent! Have to be caught that day though, I usually just get some tiny fillets off them, might be able to fry them like bream though, not sure.

    Back in the day you could buy live Grass shrimp on Long island and use them as Chum close to the marsh or a Drain and catch tide runners

    Come down to Southwest Louisiana during the winter/spring, and you might actually have a chance, although admittedly less likely than it used to be, to catch a 10 pound Speckled Trout!

    Little weakfish story time: I remember fishing in Port Canaveral Florida as a kid. I would go after ribbon fish with my father, doing it commercial style. We would go on a 15’ Jon boat, using steel leader with long shank hooks and a small glow stick attached. Anyways, weakfish were (probably still are) prevalent when fishing, even becoming a nuisance since we were only after ribbonfish. If the bait got too far to the bottom, weakfish were all over it (and I’m talking cut up pogies or mullet as bait). They were generally only 12”-14”, but man were there a lot. Not the best tasting fish tbh, since the meat was mushy, but it was all you can catch out there. Not really sure how that place is doing now.

    Had speckled trout last weekend. It was not good fried. Way to soft of a fish. It was like frying mashed potatoes. The next night I baked it similar to how you did and it was much better. Love it baked.

    I tried fishing for these all of the time when I was stationed in Louisiana. Does the speckled trout taste similar to walleye? It looks like it does.

      NO, no ,no and noda. Walleye ranks way higher on most folks tasteomometer. Specs best fresh and fried.

    My default mode for cooking fish is always to fry it in butter, salt and pepper only. Once you are sure of the taste of a fish, then is the time to do more complicated recipes.

    Caught and ate my first speck in the outer banks a few weeks ago. Thought it was amazing, and I am not a big fish eater. Maybe because it was less than 30 minutes from the water to the frying pan. Be curious to see what you think with a simpler prep, maybe skin on filet fried in butter with just salt and pepper. PEACE!

    lay your trout filets down on a buttered baking dish, season the filets then rub them with mustard and liberally coat with bread crumbs. bake at 350 degrees until finished then squeeze the juice of 1 lemon over the filets. C'est magnifique I guarantee

    We bake our extra trout and then make fish cakes out of the leftovers. They make a better fish cake than about any other fish.

    Underrated? Certainly not by me. My favorite fish to eat, salt water or fresh. Pan fried, lightly breaded( not battered), is my personal choice.
