  • Mbongo Tchobi is a spicy black stew typically eaten by the Bassa people of Cameroon. It's deliciousness has made it gain popularity in other parts of the country. The key ingredient is the mbongo spice. It can be eating with Plantain, Yam or even rice.

    Ingredients:
    1Large horse mackerel or fish of choice
    11/2 Tbs ground mbongo spice
    30 seeds njangsa
    1 seed African Nutmeg ( Ehuru/pebe) peeled
    2 large tomatoes 🍅 (or 4 small ones)
    1 large Onion
    1/2 sterm of leeks- chopped
    4 celery leaves- chopped
    1 stem parsley
    5 garlic cloves -peeled
    1/2 inch ginger root - peeled
    1/2 Cup vegetable oil
    1/4 tsp white pepper
    1 habanero pepper
    1 stem scallion( green onion)
    3 Maggie cubes

      No, the fish isn't fried first. You just put your fish one after the other and then pour in the sauce at once, to much sure fish are well placed in the pan and also to avoid them from getting scattered.
