Why do you put ginger in the ice water? Would not it take away the ginger flavor?

Hi chef, can i subtitude the wine with something else?
I can never find a wok or steamer large enough for a whole fish. Any suggestions?
Thank you-👍👍👍
I have made this wonderful recipe several times already and my family loved it each time. But now I would like to make it for a dinner party that we will be hosting next weekend, and I think we will need at least 3 fish - can this be done in the oven, using aluminum foil? If yes, do I need to make any adjustments to the recipe to add more moisture? Best regards and hope to hear from you soon :) (the dinner is on January 17)

Steamed fish is Cantonese cuisine.
I find it such a waste to throw away the fish stock after the steaming ?Why must we waste because the stock has alot of nutrients.Don't u think?

nice cooking Tom...but i heard some spooky child voice at the background between 2:31-2:34...the child was saying "bring it out...."
KD RF yeah man....just heard it too ...eeks!!
Maybe a ghost child begging for steam fish :-))
Your cutting skill is good but over 10m is too much, and the fish looks over steam. That will make the fish meat taste dry.
Show face with voice more personable
Its important to remove and throw away the steamed fish sauce as its leftover fishy smell
Steaming is supposed to be healthy but not if you use too much oil. This is the irony I find in ALL the steamed fish recipes. they ALL use lots of oil.
+CVArts Steaming wasn't invented as a healthier alternative, it's just another method of cooking. If we're talking dim sum or bao zi, there's not much other methods other than steaming. There's nothing ironic about using oil.
CVArts many nutritionists are dispelling the idea that fats are bad. some kinds of fats are good and even essential.
CVArts, you're basing your opinion on outdated information.
You don't pour the soy sauce over the fish, you pour it around it.
Why not? Wouldn't it further absorb the taste of the soy sauce when poured over both the garnish and the fish?
I do because i like the fish to absorb more of the flavor since i don't add sugar. But that's just me.
Please never eat dogs they have beautiful souls
WAAAAAAY OVER COOKED !
Wrong! Dislike !
