    INGREDIENTS:
    1 tsp Basil
    1 tsp Parsley
    ½ tsp Salt
    ½ tsp Pepper
    3 tbsp Pastured Butter
    2 Lemons + Juice
    ½ Yellow Onion
    ½ Garlic Bulb
    1 cup Basmati Rice
    1 cup Filtered Water
    1 ½ lb Thick Pork Chops (Boneless)
    ½ cup Vegetable Broth
    CORNSTARCH SLURRY:
    1 tsp Cornstarch
    1 tsp Filtered Water
    INSTRUCTIONS:
    1. Chop onion and garlic to desired consistency. Grate lemon zest and set aside. Juice Lemons and set aside. Using a meat tenderizer, pound meat on both sides.
    2. Turn Instant Pot to sauté mode and melt butter. Brown pork chops on both sides and remove from pot. Add onions, garlic and lemon zest and juice and sauté for one minute or until fragrant. Add vegetable broth and stir. Add pork back to the pot and turn off the sauté function of Instant Pot.
    3. Thoroughly rinse and drain rice until clear. In a heat-proof bowl, add rice and filtered water and stir. Place a rack inside of instant pot, then place heat-proof bowl on top of the rack. Cover with lid (make sure silicone ring is on). Set Instant Pot to HIGH pressure for 5 minutes. Allow Instant Pot to naturally release pressure for 10 minutes. Then, do a quick release. Remove bowl from pot (carefully). Remove pork chops. Turn on sauté function. Combine cornstarch and filtered water into a slurry, and then add to the pot and whisk briskly for 2 minutes. Plate up and serve with sauce on pork and/or rice. Remaining sauce can be stored in refrigerator for one week. Enjoy!
    STOVE-TOP INSTRUCTIONS:
    1. Chop onion and garlic to desired consistency. Grate lemon zest and set aside. Juice Lemons and set aside. Using a meat tenderizer, pound meat on both sides.
    2. In a skillet on medium high heat, melt butter. Brown pork chops on both sides and remove from pan. Add onions, garlic and lemon zest and juice and sauté for one minute or until fragrant. Add vegetable broth and stir. Add pork back to the skillet and reduce heat to low, cover and cook until pork is cooked through.
    3. Cook rice according to package instructions.
    4. Remove pork chops from the pan. Combine cornstarch and filtered water into a slurry, and then add to the pan and whisk briskly for 2 minutes. Plate up and serve with sauce on pork and/or rice. Remaining sauce can be stored in refrigerator for one week. Enjoy!

    • @DiningWithTara
      @DiningWithTara  Před 4 lety

      Awesome 💜 thank you so much! Vigo yellow rice is enriched white rice with saffron - so it should be exactly the same as plain white rice. Are you wanting to make it with the pork like in this recipe, pot in pot? Or just make the rice in the pot?

    • @bobtheroux3090

      @@DiningWithTara I was thinking rice in pot. Takes about 25 min on stovetop.

    • @DiningWithTara
      @DiningWithTara  Před 4 lety

      I would probably rinse the rice well, then add 1:1 in the pot - 10 oz rice, 10 oz water and set for 4-6 minutes on high pressure, then allow 10 minutes of natural pressure before doing a quick release. I cook white rice for 4 minutes, brown for 22 minutes. I've never used that rice before - but it should behave like white rice 💙

    • @bobtheroux3090
      @bobtheroux3090 Před 4 lety

      Here's my dilemma, 10 oz pack of Vigo yellow rice (slightly over 1 cup) calls for 2 1/2 cups (20 oz) of water for stovetop. Most rice to water ratios I've seen for IP are 1:1 or 1: 1 1/4.

    • @bobtheroux3090
      @bobtheroux3090 Před 4 lety

      @@DiningWithTara Thanks Tara, Appreciate your responses. I may have to experiment with the water ratio because rinsing first would wash away some of the saffron and other spices.

    ok this may be a dumb question but can i use a microwave glass bowl inside my pot like you did?

      @DiningWithTara  Před 4 lety

      Definitely not a dumb question 💛 I've used several different types of glass and not had any problems. I've heard that there is always a chance of it breaking - but I haven't ever experienced anything like that. I would think it would be ok - but I hate to say that and it wouldn't be. I would probably try it - if it were me - but it's your call

    Can I fry in my Insta Pot? 😕

      You can sauté - that's all you have to do to get started.

      Did you rinse the rice really well first? Did you follow all the steps? Water ratio? White rice? Another thing you can do is to place a plate over the bowl of rice after you remove it from the instant pot for a few minutes. Hope you enjoyed the recipe 💜

      @@DiningWithTara It was great thank you for responding: Your video definitely helped expand my isntant pot cooking knowledge as I like cooking rice and meat at the same time but keeping them seperated is optimal in certain circumstances. As for the rice it seems to cook more thoroughly when not in the bowl but mixed in with the chicken with the same cooking time. I will continue to explore the different variables displayed in your video compared to my recipe as mine was a little more simplified.

      @@DiningWithTara I have no idea. I got an IP last year for xmas and it sits in the box. I would like to try it now and so i have been looking for recipes. A lot of folks say their 1st recipe was a beef stew. I may try that tonight.

      @@ballzack57 that's a great idea! Cooking a whole chicken is another great first recipe, as is chili. The IP is a very useful tool - but there is a learning curve. I strongly suggest that you bust it out of the box and try it - I was dead set against them til I started using it 💜

      @@DiningWithTara Thanks. I have seen a few whole chicken recipes and can't wrap my head around a boiled chicken. I know its really not boiled, but something about it...
      I normally rotisserie or smoke my whole chickens. Maybe after getting used to the IP, I will try a chicken.
      Thanks.

      @@ballzack57 you're so welcome 💙 definitely give it a try sometime. The method used to cook the whole chicken makes all the difference. Definitely does not resemble boiled chicken - or even crock pot chicken after I cook it 💜
