Ingredients:
Oil 1 tbsp
Jeera 1 tsp
Ajwain ½ tsp
Hing ½ tsp
Ginger chopped ½ tbsp
Green chilli chopped 1 tsp
Matar 1 cup
Salt 1 tsp
Water as required
Chaat masala ½ tbsp
Paneer 100 gms
Wheat flour 1 ½
Salt 1 tsp
Water as required
Oil 1 tbsp
Oil as needed
Butter as needed
Method:
For Stuffing:
1. Prepare the Pan:
- Heat a pan and add oil, jeera (cumin seeds), ajwain (carom seeds), and hing (asafoetida). Allow them to splutter, releasing their aromatic flavours.
2. Sauté Aromatics:
- Add finely chopped ginger and chopped green chillies to the pan. Sauté until the ingredients release their fragrances.
3. Add Matar:
- Introduce matar (green peas) and salt to the pan. Continue sautéing until the matar mixture becomes dry.
4. Cook Matar:
- Pour water into the pan and cook the matar thoroughly. Ensure the mixture is dry before proceeding.
5. Cool and Grind:
- Once cooked, transfer the mixture to a plate and let it cool. Afterward, grind it in a mixer jar until you achieve a smooth consistency.
6. Final Mixing:
- Move the ground mixture to a bowl. Add chaat masala and grated paneer, ensuring a thorough mix. Set aside this tantalising stuffing.
For Dough:
1. Prepare Dough:
- On a plate, combine wheat flour and salt. Gradually add water and knead it into a soft dough.
2. Add Oil:
- Incorporate oil into the dough and knead again. Allow the dough to rest, covered, for 5-10 minutes.
For Matar Paneer Paratha:
1. Preparation:
- Take a portion of the dough, shaping it into a katori-like form. Fill the centre with the prepared matar mixture and seal the dough from all sides.
2. Rolling:
- Dust some flour on a working surface. Place the stuffed dough and roll it out into a thick, flat circle.
3. Cooking:
- Heat a pan and cook the rolled paratha on medium heat from both sides. Apply oil during the cooking process to achieve a golden-brown texture.
4. Final Touch:
- Once fully cooked, transfer the paratha to a serving plate. Add a dollop of butter on top for an irresistible finishing touch.
Serving:
Your meticulously crafted Matar Paneer Paratha is now ready to be served.

When i make only matar k paratha i always crush the cooked matar with pav bhaji masher. Those whole pieces of matar some crushed some whole are very delicious.
