    Palak Matar Paneer
    Palak Matar Paneer Sabzi is a delightful and nutritious Indian dish that combines the vibrant flavours of spinach, green peas, and paneer (Indian cottage cheese).
    Portions serving: 4-5 pax

    Cooking time: 30 mins
    Calories: 286 cal per portion
    Ingredients:
    Peanuts 1 tbsp
    White sesame 2 tbsp
    Besan 2 tbsp
    Coriander seeds 1 tbsp
    Saunf 1 tsp
    Black pepper 8-10 pcs
    Kashmiri dry chilli 1 pc
    Jeera ½ tbsp
    Oil 2 tbsp
    Jeera 1 tsp
    Garlic chopped ½ tbsp
    Green chilli chopped 1 tsp
    Matar 1 cup
    Salt 1 tsp
    Palak shredded 3 cups
    Water as required
    Kadai Masala 1½ tbsp
    Onion chopped 1 cup
    Ginger chopped ½ tbsp
    Green chilli chopped 1 tbsp
    Garlic chopped 1 tsp
    Garlic sliced 1 tbsp
    Tomato chopped 1 cup
    Turmeric powder ½ tsp
    Salt ½ tsp
    Red chilli powder ½ tsp
    Jeera powder ½ tsp
    Coriander powder ½ tsp
    Water as required
    Paneer diced ½ cup
    Ghee 1 tbsp
    Method:
    To begin, heat a pan over medium heat. Add a handful of peanuts and sesame seeds, toasting them until they release their aroma. Introduce besan (gram flour) to the pan, roasting it until it becomes fragrant.
    Transfer this mixture to a mixer jar and grind it into a fine powder, setting it aside for later use.
    In the same pan, add coriander seeds, fennel seeds, jeera (cumin seeds), black pepper, and dry red chilli.
    Toast these spices until they become aromatic.
    Once done, transfer the mixture to a mortar and pestle, pounding it into a coarse texture.
    Now, heat a fresh pan and add oil. Add jeera, chopped garlic, and chopped green chilli, sautéing them until they release their flavours.
    Toss in matar (green peas) and salt, ensuring an even coating. Incorporate shredded palak (spinach) and cook until wilted.
    Add some water to the pan and continue cooking the matar until they reach the desired tenderness.
    In another pan, heat oil and add the pounded masala, allowing it to bloom and release its rich flavours.
    Add chopped onions and sauté until golden brown. Introduce chopped ginger, garlic, and green chilli, sautéing until fragrant.
    Incorporate chopped tomatoes and cook until they turn soft and mushy.
    Season the mixture with turmeric powder, red chilli powder, salt, jeera powder, and coriander powder, sautéing until the masala is well-cooked.
    Add a splash of water to prevent sticking and cook the masala to perfection.
    Stir in the peanut-sesame-besan powder, mixing well.
    Add some water to achieve a desirable consistency and let it simmer for a few minutes.
    Now, combine the palak and matar mixture with the masala in the pan.
    Add diced paneer to the gravy, ensuring it absorbs the flavours.
    To enhance the richness, top it with a spoon of ghee and allow it to cook for an additional minute.
    In the end, you'll have a delectable Palak Matar Paneer Sabzi ready to be served.
    The combination of vibrant greens, hearty paneer, and aromatic spices makes this dish a wholesome and flavorful addition to your Indian cuisine repertoire.
