    Finally, a lefthanded butcher for me to learn from. Thank you for your videos. I always have trouble trying to learn knots from right-handed people.

      I am a left handed retired butcher I tie knots right handed so I never have to put the twine down I hold it in my left hand tie the knot with my right hand and then pull it tight with my left hand you practice it it's a lot better and faster 👍

    Well done series on instructional method for processing a beef hind quarter, but was very disappointed at the amount of trim that should have gone into the hamburger tub, not the waste barrel, to be sent off to rendering plant.

      This is a 4 week aged beef. The outside is very dry and therefore not good for hamburger meat.

    Bears, monkeys and apes are also walking on their whole feet! Fat is not only keep the meat moist but also adds much flavour
