To answer a question I get a few times. Skinning beef versus pigs. There is a considerable difference. Beef have a membrane between the skin and flesh, pigs do not have such a membrane. In other words beef are a little easier to skin then pigs.

What brand of knife and steel do you use?
Knives are from Victory Knives, New Zealand and steel is from Isler Stahl, Switzerland.

Thank you. Yes I do would like to do a fore quarter tutorial too.
So if you were doing T-bone you wouldn't have cut The eye fillet out and just would have cut the loin section off and cut it into steaks and they would have been T-bone
Yes for T-Bone steaks you leave the tenderloin attached to the loin.
I've also owned all manner of brand of butchery & kitchen knives! A professional Mackerel fisherman told me about Victory knives, so I ordered one! I wish someone had told me about Victory Knives 20 years ago! Takes an edge, holds an edge & a pleasure to use! I suppose its just one of those ones where, 'If you know, you just know'!!
52 years in the meat industry and like you I worked with just about every knife brand. Like you I wish someone would have told me 20 or 30 years ago about Victory Knives, but better late than never.

I use a 5 inch full flexi for fillets at jbs beef city Australia. They come out much cleaner

How does everyone store their stunners? Having a tough time. Mine is exactly 350mm long and did not come with a case or cleaning kit.
Mine is stored in a pouch my wife made for it. I ordered a cleaning kit for my stunner by the company from which I purchased. I would contact the company that males your stunner about a cleaning kit.
@@othmarvohringer Thanks. Cleaning kits are easy to buy. I have been looking extensively on eBay for a case. Not much luck finding something suitable. Sadly, the model I purchased has very little information or accessories that I can find. It was an adler and entwistle 22. I will keep looking. 🙂
When worked in the butcher shop nearly 40 years ago we used to call the meat inside the blade bone oyster steak great for bbq we just gave it a hit with the chopper to flatten itand to make it tender love that meat great taste ❤ nice victory knife
Hi Othmar, are you still using those Kiwi knives, are they really that much better than the Swiss? Always good to watch a lefty working btw, they hated us on the line!
Yes I still use the Kiwi knives and will until my dying days. It is the best knife I ever used in all of the 51 years I am at it.

Why throw away them pieces?
The carcass has been aged for 4 weeks in the hanging cooler. Besides the usual waste of tendons and connecting tissue there is the waste of the dried up outer layer of the carcass. While dry aged meat tastes absolutely superior there is more waste as a downside.

What model or number is that Victory skinning knife? There are several options, I'm unsure which one would be the best option for just that same purpose.
My skinning knife of choice is the Victory 204 15 HG ribbing knife. I love this knife as it has just the right curve for me.

I use the Isler Poli-Cut wich is a very fine grid steel.

I've used mine probably about 100 times. I don't want to clean it because I'm afraid it may not work when I put it back together.... Has anybody had an issue with it jamming, if so how many times before last clean?
I clean my captive bolt gun every time after use. If you assemble captive bolt gun as the manual dictates then you should have no problem.
Clean everyday or you will tear it up. I'm surprised it's working.
I have, fortunately, just chanced upon your excellent channel. Thank-you for sharing your experience and expertise in such a user-friendly way. I have learned so much from you. You mentioned the steel you use is one from your home country of Switzerland. Are you able to advise brand, please. It will be interesting to see if I can purchase in Australia. If not that steel, do you have other recommendations? Thank-you once again for sharing your knowledge.

Here in New Zealand only the wild 🐖 pigs have black hair if we were to process them through our old pig slaughter floor it would be alot of work because hairy pigs especially black or red hair is a lot of work great video thank you so much
These pigs are a heritage breed called Berkshire, they are quite common here.
Another great video thank you so much happy to see you using victory knives the best I still believe have you tried Victory new steels they are made from. Soligen germ steel V5 is what we use I just sand it down a touch works well with the victory I have a couple spare and would be happy to post it to you in Canada please give me a mailing address I'm proud of New Zealand victory knives I have nothing to do with the company just been using them for nearly 40 years thanks again you are a true master best wishes from South Auckland 😊

I order the new Aaron Waters hog skinner. This one is the Victory 213 13 HG, my go too hog skinning knife.

@@joelmonkley6177 Aaron Waters is a farm butcher and sells Victory Knives in America and Canada. Victory Knives manufactured a new pig skinning knife from the design Aaron Waters made. The knife is called "Waters pig skinner."
