When I do onion soup, I go kinda crazy with the swiss and gruyere mixture because omg cheese

If it helps anyone, I don't care for sherry and I use an extra bit of beef broth + a splash of Worcestershire sauce. Yum!

I absolutely adore how, at the end of most of your videos there's the requisite:
1. Bite
2. Wincing and hand-waving
3. "HAT."

For those who try to follow the written directions, DO NOT USE A TABLESPOON OF THYME IF USING DRIED!!! Use LESS than a teaspoon!!! It's insanely overpowering! Also, I would HIGHLY recommend watering down the broth! It's very strong and watering it down made a huge improvement! Make sure to taste it before putting it in the bowls!

Hey Laura, I know you never answer the comments but you say it's very important to use low sodium broth but you add salt not only one but twice in the video. What gives?

I found this recipe by mistake today, so glad I did. I used to ordered this whenever I went to a diner when I lived in the US (NJ). It has been 10 years, I missed this. I don't have that wine and shredded some parmesan, so good.

I am making this for dinner tonight! Love it! One of my favorite soups ever but I never make it at home, till now, and only got it when eating at restaurants. I love that now I can try it on my own and control the saltiness as well as the cheese on top! Nothing worse than ordering this and getting it served with "pizza mozzarella" on top! So wrong!! Made this tonight, added some red wine to it too. Everyone loved it; me, not so much, but I hate onions. However, the few mouthfuls I had were good. Will try this again as my husband loved it so much.
