【Authentic Hand-Made Udon Noodles ! 】How to make "Hiyakake Udon (Cold Udon noodles)" 冷やかけうどん

    Hello everyone.
    This time, I’ll make Japanese noodles “Udon”.
    ”Hiyakake Udon” is cold Udon pouring cold udon soup.
    It’s perfect food in hot season.
    I use hard flour, and cake flour.
    It’s very easily how to make Udon noodle.
    Let’s cook together !
    Ingredients
    “Udon noodles”
    ・100g Hard flour
    ・100g cake flour
    ・4g salt
    ・100cc water
    “Udon soup”
    ・800cc water
    ・15g knob
    ・35g katuobushi (bonito flakes)
    ・40cc soy sauce
    ・20cc mirin
    ・Katsuobushi (bonito flakes)
    ・Tenkasu
    ・Nori
    ・Green onion
    Recipe
    ”Udon noodles”
    ・Mix water and salt.
    ・Hard flour and cake flour into the bowl, and mix.
    ・Add the salt water, and mix them.
     Next, knead them.
    ・Put the dough in a sturdy nylon bag.
     Step on the dough about 20 steps.
     (Please don’t close the nylon bag.)
    ・Take the dough out of the bag and fold it.
     Put the dough in a nylon bag , and step again.
     Repeat this process 10 times.
    ・Close the nylon bag, and let it sit over 1hour.
    ・Dust with flour on the mat and dough.
    ・Stretch the dough into thickness 5~8 mm.
     Dust with flour again, and fold the dough.
    ・Cut the dough into 5~8 mm width.
    ・Boil the noodles about 10 minutes.
    ・After boiled, rinse the noodles.
    ・Next, the noodles into cold water, and cool.
    ”Udon soup”
    ・Water and Konbu into the pot.Let it sit 30 minutes.
    ・After 30 minutes, turn on low heat.
     When boiled, remove Konbu quickly.
    ・Add the katsuobushi, then boil 2 minutes.
     Please remove the scum.
    ・Strain with a sieve and paper.
    ・Dashi soup into pot, then add soy sauce and mirin.
     Them boil.
    ・After boiled turn off heat, and cool them in the fridge.

    Hi, I like you put the directions in the description. You have a typo in the description. I copied this - Hoe to make "Hiyakake Udon (Cold Udon noodles)" 冷やかけうどん Hoe should be How, the "W" and "E" keys are right next to each other on the keyboard😄😄😄
