  • While in an Amish community in Kentucky, I stopped to visit an Amish family who I'd never met before. I didn't expect it, but they invited me in - and then made sure I left with three gifts for the road.
    My name is Erik Wesner and I'm not Amish. Back in 2004, I met the Amish while selling books. Since then, I've visited 5,000+ Amish homes & dozens of Amish communities. I run the Amish America website. More: amishamerica.com/

    Years ago I had a mishap that put me in the hospital & was very surprised to receive cards & notes from my Amish customers. Mostly saying they were praying for me. I was very touched & it helped me recover. Their kind gestures meant the world to me. (Canned bacon is good! It fries up just fine :)

    Years ago while visiting a B&B in Paradise, Pa. that was nestled in between to Amish farms we were graced with the presence of the Amish farmer who lived across from the B&B, his name was Aaron and he came in every morning to have coffee with the guests and to answer any questions we might have. I happened to ask what his wife did throughout the day while he was in the fields working and he told the story of her day to day life, raising the children, cooking, cleaning, helping other neighbors, gardening and many other daily tasks. He then mentioned that she was busy that day doing some canning and preserving. I told him that I had a fond memory of my mom making pickled beets, they were my favorite and I hadn't had them since she passed away, he said they had them quite often. The next morning he came in with a can of his wives pickled beets for me to take home, what a wonderful gift. They were a little different from my moms and in fact they had a cinnamon stick in the brine, but they were lovely and I enjoyed every bite. What a lucky family they are to have such a wonderful cook in their home. That bacon looks interesting, I've heard of other meets being canned, but not bacon. Please let us know what you thought of it once you try it, Thanks for sharing all that you do, I feel like I learn something new every time I watch one of your videos.

      What an awesome story, thanks for sharing it. Do you happen to know if that is something Aaron did as an arrangement with the BnB or just out of his own desire to meet people? And thanks, happy to hear you like the vids👍👍

      @@AmishAmerica I don't know if it was an arrangement he had made with the owners of the B&B but I do know they were very good friends. The owners grandkids would visit during the summer and spent many sleepovers with their little Amish friends across the road. I know also that the Amish man who lived right next door would sometimes invite B&B guests to play volleyball in his yard with his family and his son owned a car being of the age that the young adults have rumspringa, but his father would not allow him to park on their property so the B&B owners gave him a parking spot at their house. The 2 Amish men were brothers (Aaron and David) and they were very interesting to talk to, it certainly was nice to hear about their culture first hand. I don't know if the B&B is still open, but if you're out that way you can check, it was called Frogtown Acres in Paradise, Pa.

    I would eat the bacon sooner rather than later, and definitely keep it in the refrigerator after opening it.
    Bacon isn't approved for canning by the USDA, but a lot of people do it anyways. Assuming she's followed the appropriate procedures, it will most likely be just fine. The things to watch out for is if the lid "pops" before you open it (if it pops, don't eat it). Listen for the sound of the air rushing in (if you don't hear the air coming in, don't eat it) and give it a tentative sniff, if it smells "off" or rancid, don't eat it. If it smells like hot dogs, bologna or spam, you're good to go lol.

      @@AmishAmerica I just thought of something..Sauerkraut...we get alot of sauerkraut from the Amish around my area..the cabage is picked in the late summer/fall and they make sauerkraut which is fermented in crocks and done just around Thanksgiving..it is a HUGE tradition here to have "pork and sauerkraut" for New Years eve/New Years day amoung the Amish community and 9 out of 10 English households it's good luck for the new year..there's a little story behind why pork n sauerkraut is good luck to have as the first thing you eat in the new year..for eating the pork ..when a pig roots around in the dirt/mud with their snout they always root " forward" so your moving forward into the new year..and the sauerkraut is just really easy to make and it's a major like no. 1 German traditional food ..so I was wondering if this eating pork and sauerkraut for new years tradition is everywhere the Amish live or just here in Pennsylvania ? Pennsylvania and my area were heavily settled by the Germans and some Scottish but mostly Germans here..it's honestly a big deal for the English here let alone the Amish to get the best homemade sauerkraut and the best kinds of pork..pork roasts pork butt kielbasa German sausage etc for this tradition..in your travels do you know if all the Amish communities do this food tradition or just here in Pa ???

    I can lots of meats and the issue with canning bacon is the fat content as it relates to botulism. However, done properly, and I have no doubt it was, its fine as long as the seal remains intact. I have heard of it and am glad you showed it. I always wondered what it would look like. We haven't had pigs in a while and I don't think I would try it with commercial bacon. But it makes perfect sense for people without freezers. Again, the fat content makes it unsuitable for most drying methods. Salting is about the only other way to preserve it.

      Pam..I thought the reason you dont can our bacon is due to the curing process, similar reason with ham. But if the Amish bacon is not cured ( a fresh processed pig, would not have had time) then it should be safe to can.

    • @pamsloan84
      @pamsloan84 Před 2 lety

      @@cm-xq5zj I suppose it depends on how you cure it. Bacon is not bacon until it is cured. It is pork belly as uncured pork. So I suspect the canned actual bacon. You also can't make it taste like bacon after canning, it would taste like pork. The salting, brining and smoking involved in curing would not prevent canning. However if you are talking about ham that has been hanging, like for country ham, I don't know. All high fat foods are at risk for botulism, so butter, milk and so on have been discouraged over the years. Doesn't mean you can't, just use caution. If you can can a soup or stew with bacon or ham why couldn't you also can those alone all things considered?

    • @cm-xq5zj
      @cm-xq5zj Před 2 lety +1

    🤔 Are you anti-bacon? You know that stuff has gotta be great. Though, I do hope they told you how to "prepare" it. Like, is it fully cooked? Wouldn't hurt to throw it in the oven to crisp it up. Nobody wants soggy, droopy bacon.😆💕 How about Amish New Years traditions?🤔 As always, thanks for all the great info! I find the Amish style of simple living fascinating!

    • @AmishAmerica

      Heh, no I am quite bacon-friendly 👍👍They didn't say anything on prep. I would definitely cook it though. Glad you liked it - I touched on New Year's in the Christmas video just a bit, being a day for spending time with family and visiting. In Rebecca Miller's case they also had a pizza and ice cream youth supper that day or it might have been on the eve.

      The Amish bacon was not cured. It should be safe to can. And I am not a rebel canner either, I follow USDA guidelines . But I think this one goes along the same lines as ham, you can't do cured meat, but you can do pork.

      No there aren't any horse-and-buggy Amish, though there are Beachy Amish which is a more progressive group, comparable in some ways to Mennonites (they use cars & more tech). Would be neat to see Amish settle there and also more in NC 😎

      Granted the bacon looks weird to our fast food standards. I'd fry it up and added to baked beans or a soup that can simmer along time.
      Humans have had more time running around without refrigerators than with. Our bodies aren't that fragile.
