Introducing my kolliti/κολλητή - Krisoula - sharing her special Trigona Panoramatos recipe! Krisoula’s maternal heritage is from the Thessaloniki region. On her travels to the city 20 years ago she discovered these crispy-custardy delights and she has made them ever since. The Trigona Panoramatos were first created and made by the zaharoplasteio Elenidis in the 1960s, in the suburb of Panorama in Thessaloniki. They are now widely available and a signature dessert from Greece’s northern foodie capital.
