    Hello and welcome back to my weekly vlogs from the country side of Ireland!
    This week, as the schools are on break for Easter, join me as I bake deliciously spiced homemade hot cross buns.
    Also, I’ll be shopping for some Easter home decor.

    Here’s the full recipe I used in the video.
    Note: in the video, I made my hot cross buns using my thermomix, because I didn’t have too much time to prepare them. However, the following recipe only uses a couple of mixing bowls and a saucepan.
    Dee’s spiced hot cross buns!
    Ingredients:
    600g strong white bread flour
    50g granulated sugar
    1 teaspoon salt
    1 sachet instant dry yeast
    2 teaspoons ground cinnamon
    1 teaspoon ground mixed spice
    1/2 teaspoon ground nutmeg
    300g warm milk
    60g unsalted butter, melted, plus extra for greasing
    1 egg
    140g raisins (or sultanas, or currants or a mix of them)
    40g chopped mixed peel
    For the Crosses:
    40g strong white bread flour
    20g granulated sugar
    40g water
    For the Glaze:
    45g milk
    25 g light brown sugar
    1 Tablespoon orange marmalade
    Instructions:
    In a large mixing bowl, combine flour, sugar, salt, yeast, cinnamon, nutmeg, and mixed spice. Mix well.
    In a separate bowl, whisk together warm milk, melted butter, and the egg.
    Make a well in the center of the dry ingredients and pour in the wet mixture. Stir until a dough forms.
    Turn the dough out onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. Incorporate the raisins (or currants) and the mixed peel during kneading.
    Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
    After the dough has risen, punch it down and divide it into 12 equal portions. Shape each portion into a ball and place them on a greased baking sheet, leaving a little space between each bun.
    Cover the buns again and let them rise for another 30-45 minutes, or until they have doubled in size.
    While the buns are rising, preheat your oven to 375°F (190°C).
    In a small bowl, mix together the flour, sugar and water for the crosses to form a smooth paste. Transfer the paste to a piping bag or a small plastic bag with a corner snipped off.
    Pipe crosses onto the risen buns.
    Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
    While the buns are baking, prepare the glaze by combining milk, marmalade and sugar in a small saucepan. Bring to a boil, then reduce the heat and simmer for 2-3 minutes.
    Once the buns are baked, brush them with the glaze while they're still warm.
    Allow the buns to cool slightly before serving. Enjoy your homemade hot cross buns!
