Apple & Blueberry Protein Crumble

  • When I made this recipe, I had high hopes for using some bruised and older fruit.
    I combined apples and blueberries because of their high nutritional profile; when combined, they taste delicious.
    When I tasted it, I could not believe just how delicious it was.
    Here's what I've eaten my crumble with it so far:
    - with my coconut yogurt
    - adding it to my morning smoothie
    - with a handful of seeds
    - just on in its own delicious form
    - I created a takeaway version to bring into work
    This crumble is perfect with almost anything, and it will continually surprise you.
    I made a smaller batch and had a smaller tray to test it out. But I urge you to cook up a storm with something larger to have enough prepared during the week.
    I'll make this again with strawberries, raspberries and maybe some peanut butter.

    P.S. I mixed my plant-based protein powder with the spelt flour (in case you were wondering when I added that in).
    Ingredients
    Crumble
    120g Instant. oats
    65 g spelt flour
    2 tbsp Cinnamon
    4 tbsp Maple syrup
    2 scoops protein powder
    1 tbsp vanilla essence
    Blueberry & apple filling
    2 tbsp arrowroot flour
    1 cup blueberries
    2 small apples chopped
    1 tbsp cinnamon
    1 tbsp Christmas spice
    Additional
    add a scoop or two of your favourite yogurt and maybe a little more cinnamon! It's delicious!
    Method
    Follow the video instructions, and feel free to add your favourite fruits that may be too soft for consumption.
    This recipe also helps save you from throwing out foods, and it may work very well with bananas & eggs if you are a vegetarian too!
