I appreciate your HONEST reviews!! My entire trip to Italy this coming fall is based on 2+ years of note taking from CZcams & Google Map reviews. I've found so many "off the beaten path" restaurants from "walking" the streets via Google Maps (& the attached reviews) -- I can't wait to try them! Unfortunately we just took Rome off our itinerary for fall so we could squeeze in Venice, San Gimignano (thanks to your video!), and Cinque Terre. We'll have to return to Rome another time (spring?). that's because the guy is italian..of course italians are stricter when judging pasta cause they tried a lot of it and what can be perceived as good by foreigner can be average for them.. I enjoyed your video of Rome and used it on my trip. I came across today a must restaurant you should put on your list to review near Torre Argentina that I think is a serious contender for the Cacio e Peppe. The restaurant is Bottega Tredici. The pasta was cooked to perfection and the pecorino formaggio was glorious. This full Italian walked away totally stunned in a good way. I might have to go back and test the Carbonara tomorrow!

3 pasta dishes? Um, you missed the most underrated one; Pasta Alla Gricia. I just came back from Rome last month where I had the best version at Da Enzo al 29. Soooo good. So much more flavourful than Cacio e Pepe, and a nice alternative if you dont want egg or tomato sauce. La Gricia is a Rome staple guys. And Da Enzo was by far our best meal in Rome, definitely worth the wait! Every restaurant is allowed an off night, we went to Nanarello the night before (highly recommended) and my Amatriciana was soupy and soft like Chef-Boyardee. Give Da Enzo another chance. Also Best Tiramisu.

Many thanks Jessi and Alessio for your honesty and candor - you’re awesome! Yes, it’s always cool to see your videos where you find places that you can recommend / give your highest rating / are excited about (like Arthur Street in NY). However, it’s also extremely helpful to hear about your experiences with places where you had a different opinion than the popular vote/ratings. People are free to make their own decisions and can choose to try or not try based on your analysis/evaluation (people have different preferences). Thank you again - your trip to Rome was a fabulous idea - looking forward to seeing more videos!

I can cook amazing amatriciana pasta, but carbonara has some kind of magic that I haven't been abe to recreate.
In Rome we ate at a small place in Trastevere. There were some other places with a huge line, but this place had no line, and the menu was only in Italian. I'd like to tell you what it's called, but they don't seem to be on google maps. It was somewhere close to Piazza Santa Maria.
The rigatoni carbonara were just extraordinary. Creamy, hot, cheesy, peppery, perfect. They explained to me how they do it, and it's the same as everyone else: guanciale, pecorino (and parmigiano), and yolk. But somehow, theirs is just miles better than every other carbonara I've ever had.

I was eating alone and given a bad table after queuing for over 30 minutes to get a seat. I would not re or go back. I think in the past it was probably a good simple place but it’s fame on social media has had a negative impact on the food quality. There were also far more foreigners than Italians there which is not a good sign either.

You missed out going to the unofficial Rome King of Carbonara, Luciano Monosilio. That could have been the top one out of them all.
