    Taiwan is home to Din Tai Fung, a Huaiyang Cuisine masterpiece, but how did it come about - what is its story? What's the history of this legendary restaurant? I give a quick overview of the history of this Restaurant in which the origins of: BIngyi Yang and Din Tai Fung, are explained.
    Din Tai Fung is a Taiwanese restaurant franchise, specializing in Huaiyang cuisine.
    which is one of the Four Great Traditions in Chinese cuisine.
    Outside of its homeland of Taiwan, Din Tai Fung also can be found in Australia, China, Hong Kong, Indonesia, Japan, Macau, Malaysia, Philippines, Singapore, South Korea, United States, Thailand, UK and the UAE. (The United Arab Emirates)
    The Founder Yang Bingyi spent over a decade of his life working at Heng Tai Fung (恆泰豐), a cooking oil retailer in Taiwan. He then wanted to branch out on his own to support his family. Together with his wife he founded Din Tai Fung which then sold their own cooking oil in 1958. The name was a combination of his previous employer's company name "Heng Tai Fung" and his new supplier: "DinMei Oils".
    Around 1970, tinned cooking oil became prevalent, and business diminished drastically. In order to survive, Heng Tai Fung's owner suggested Yang and his wife to convert half the shop to making and selling steamed buns (Xiaolongbao). The buns were so popular that the store stopped selling oil altogether and became a full-fledged restaurant in 1972. The original restaurant is located on Xinyi Road in Taipei.
    In 1996, the first international location opened in Tokyo, and the first North American store opened in Arcadia, California in 2000. The first European branch was opened in London in December of 2018.
    Without a doubt, Din Tai Fung is famous for their freshly made and delicious Xiao Long Bao. It perhaps gained its acclaim in North America because it was rated among the 10 top restaurants in the world by The New York Times, in 1993. And, then furthered it status by being awarded a Michelin Star in 2010, at their Hong Kong location.

    I personally think Din Tai Fung is way overrated. Maybe the branches i tried in north america and japan were not very good but ive tried small cheap taiwanese restaurants that served xiao long bao and they were much better. I think in america at least, it has become popular as a sort of entry level taiwanese cuisine restaurant at shopping malls for those who haven’t tried it yet.
