    To be the exact Pizza Hut thick and chewy recipe we made 3 sized dough balls , small,medium and large. Then they were put on individual bins each bin contained 8 to 10 dough balls and covered with lid then put in the walk in cooler over night to be ready for the next days dinner rush. There’s never been anything like since they made it, I worked there back in the late 70’s and we would often run out of the thick and chewy crust unlike the thin and crispy dough which we made and put in to plastic lined large round containers kinda like a trash can. Then we would take a hunk of dough out and run it thru the electric roller to flatten it out put it in pan and cut off the excess which would go in a separate container to be used for the next days all you can eat buffet….boy did I eat a lot of pizza back in those days…😂😂😂😂

    WARNING The recipe amounts are just wrong compared to the amounts used in the mixer in the video.
    if you pay attention, the mixer has a scale, the amounts used are below:
    200g of water with yeast + 70 g while mixing
    520g of flower (not 600g)
    54 g of oil (not 1 cup and far less than the amount of water used)
    20 g of salt (way more salt than 1 tbs)

      I vaguely think I've read that self-rising or bread flour helps, and maybe even dough with a little more moisture.
      I haven't tried it though.

      The pool of oil in the pan during the second proofing is what makes it crunchy and rich.

    • @pomponi0
      @pomponi0 Před 2 lety +2

      If you want airy you need flour with strength instead of general purpose flour. Look up 0 or 00 flour. Also, knead it until you can do the windowpane test. Also, the oven should be as hot as possible (be extra careful not to burn it, though).
