Note: Type "00' flour is only useful if you have a pizza oven. If your oven cannot reach 800+ Degrees F, use bread flour for a similar crust, or as you said, all purpose for a slightly denser crust. Bread flour has a much stronger "Memory" while trying to shape, so it definitely takes some patience. A higher hydration makes this a little easier in the forming phase, but more difficult to kneed as it's sticky. Bread flour is also WAY cheaper than type '00'.
I do not have a pizza oven, but my understanding is type '00' is definitely superior if you do. As long as you can afford it. I may have a pizza addiction. For years I have used a pizza stone. Many actually. About 6 months ago though, I bought a pizza steel. I will NEVER go back. Works as a griddle on the grill and it's great for cooking quite a few different types of bread as well :)

Love your pizza recipe, one thing I do is use baking paper instead of flour to ensure it doesn’t stick to the stone. It just seems more foolproof to me and I’ve never had a problem 😊

For anyone under time constraints with making their own pizza I made the dough recipe according to the grams and only let it proof in a greased bowl for just over an hour, and then after splitting the dough into 2 I did not proof again for another half hour and the pizzas still turned out tasty. I preheated the oven for 500 degrees and cooked the pizzas onto a stainless cookie sheet and the pizza still turned out good enough for the average supper. You're welcome

In a home oven setting, to avoid the floppy and uncrispy crust, you can try putting the sauce only to the dough then bake it for 5 mins or until the sauce dries out. Take out the pizza, put the rest of the toppings then bake for another 5 minutes at max temp. Solves the floppy pizza crust problem. Happy pizza making! :)
Good advice. Alternatively he can get a thicker pizza stone and pre-heat it at the oven's max temp for a longer period of time.

Depending on your oven’s maximum temperature, maybe just bake for 4 and 4 minutes, or less. At 280* C I do 4 + 4 minutes.

I think it needs to be said that home made pizza is so good and so delicious that no matter the recipe or toppings that you choose, it just tastes so damn good that everyone should try it at least once (because I know that once you do try it, you will never look back)

Here in Colombia, pepperoni pizza is one of the most popular, because Domino's pizza makes it great. They don't add large amounts of pepperoni, but the flavor is very constant and you can feel it with each bite.

Water, flour, yeast, salt, sugar. All you need to make great crust at home but please don’t used pre-shredded cheese… that has all kinds of anti-caking agents in in. Blech. Grate your own. You will be simply rewarded. And don’t over load. It will make the crust soggy.

Your pizza looks delicious Josh. Allow me recommend a different way to enjoy pepperoni on you pizza. I live in Windsor, Ontario, Canada and we have our own "Windsor style pizza" and what we do is julienne the pepperoni into match stick size pieces and scatter them all over the pizza to ensure that you are getting pepperoni in every bite and it's absolutely delicious. One more trait of a Windsor pizza is canned mushrooms over fresh. Canned mushrooms contain a lot of moisture which stands up to the high heat of a pizza oven and they are preferred because they don't shrivel up and dry out like the fresh ones. What you're left with is a more meaty flavorful mushroom.
