    There’s a reason vegetarian dishes have such an important place in Greek cuisine. It was in Kalymnos that I first saw a Greek Orthodox calendar, which indicates “vegetarian” days & “fish” days ...etc. It was fascinating because until I saw the calendar, I thought that Lent was the only time of the year with dietary restrictions.

    This is a lovely dish, I’ve prepared it three times now, using only 1/4 c olive oil, and one 10 oz bag fresh spinach. I’m preparing it again tonight, and serving myself, with rack of lamb. :-)

      I'm sure i will.It's nice to see that Greeks that left from Greece for a better life keep our food traditions alive wherever they go.Here the majority of the Greeks have almost forgot them and adopted a more western fast food lifestyle which is really bad.
      I have to admit that whoever taught you cooking did an excellent job.Give him my best. Your recipes are very accurate to they way my grandmother and mother are making it and sometimes i make them for my family when i have free time.
      I hope you get more subscribers and viewers so more people around the world start cooking our healthy delicious traditional cuisine.

      ***** That is the reason why I started to learn how to cook Greek. My boyfriend has a Greek father but he rarely eats traditional food, and I find that so sad, since its soooo good! Traditions should be preserved no matter what! :) So we have a mixed up kitchen here in my home, Dutch/Greek. Kind of a funny combo.

    Loved your video! I'm in League City, south of Houston. But I attend a Serbian Orthodox Church in Galveston. We have All Orthodox Sunday next weekend at our church and I needed a good Lenten dish to make. I've decided this is it! (Minus the cheese for Lent) thanks!

    Hi Dimitra, greetings from Sydney Australia! Probably the most simplest and best spanokorizo version I've seen in a long time! I hate it when some people make it and it turns out a bit slushy & sloppy, but yours appears to have the perfect finish. The rice looks fluffy and perfect which is the way I like it. Well done!     Making this tonight along with green beans in a Greek style and something that will make a priest faint . A real Greek feast here tonight. How did I learn all those meals? For you. Good news in my town, I have now found a supplier who sell spinach in big bags at affordable prices, we have a Greek restaurant opening up in town and a new ethic food shop has opened up, selling Middle Eastern foods, and sells some ingredients used in Greek cooking.     2 pound fresh spinach, chopped
    1 red onion, finely chopped
    6 large cloves of garlic, sliced
    ½ cup of olive oil, plus ¼ cup more
    1 teaspoon dried dill
    1 cup basmati rice, washed and soaked for 15 minutes
    1 and ½ cups water
    1 and ¼ teaspoon sea salt or to taste
    Black pepper to taste
    1-2 lemons cut into wedges
    Feta for garnish, about ¼ pound

    I have just done it as a side dish served with chicken in fresh cream and mushrooms and grec salad. Instead of dill I put oregano cz I don't like dill. Thanks a lot for your dishes. Am not grec but I love your food ,

    Thanks for the lovely recipe Dimitra! I recently heard about the benefits of the cuisines originating from the Mediterranean region so I'm going a little gung-ho about recipes like these. It's an additional bonus that it's vegetarian-friendly! Plus, you're the first non-Indian that I've heard pronounce 'Basmati' correctly!

    I'm Pakistani by birth and my mom makes the spinach very similarly minus dill and red onion. And she cooks it with butter and does add little milk with cumin. The yummiest recipe. I am wondering if this is a Greek dish, how did it get to all the way Pakistan. We were colonized (aka oppressed) by the British but am curious how it got transmitted. Regardless, I love it and cook it often, too.

      I don't know if it had any effect. But Alexander the Great reached Pakistan during his expedition/conquest. Maybe the dish has similar origins

    Can you replace the fresh spinach with frozen spinach and account for the extra water? Fresh spinach in clamshells and bags always go bad quickly for me.

    Extra virgin oil should be cold-pressed (less than 0.02% in Acidity) otherwise it's not a good oil
