Filet Mignon Steaks GRILLED with a Reverse Sear and Basted with Garlic Butter

    Garlic Butter Filet Mignon Recipe
    - 5 - 12oz Beef Tenderloin Filets (AKA - Filet Mignon Steaks)
    - 1/4 cup Worcestershire Sauce
    - 1/2 cup Killer Hogs TX Brisket Rub
    - 1 Tablespoon olive oil
    - 8 cloves garlic minced
    - 1 shallot minced
    - 2 sticks salted butter
    - 1 Tablespoon chopped parsley
    Directions
    1. Drizzle the outside of each steak with worcestershire sauce and season heavily with TX Rub (coarse salt and black pepper can substitute).
    2. Set up a grill for 2 zone cooking - hot and cool side. I used my primo ceramic grill running Royal Oak Lump charcoal but any grill will work.
    3. Keep the grill between 275-300°F for the first stage of the reverse sear. Place a probe thermometer in the center of one of the filets and set each steak on the cool side of the grill to start away from the direct fire.
    4. Once the internal temperature reaches 115°F - about 25 minutes; remove the steaks from the grill and place on a foil lined sheet pan. Rest the steaks for about 15-20 minutes. You will notice the temp continues to climb but it will eventually stop and start to drop. This is where you want to do the sear stage.
    5. While the filets are resting - add a drizzle of olive oil to an iron skillet. Add the garlic and shallot and saute until soft - season with a little TX rub for flavor.
    6. Move the skillet off the direct heat and add the butter. Stir until the butter melts about 2 minutes and add the chopped parsley.
    7. Brush each filet with the butter mixture and place over the direct heat (Fire side) of the grill for 1 minute on each side. Continue brushing with butter at this point and only cook until a char starts to form. It should take about 1-2 minutes total each side. It is important to not walk away and be extremely careful at this point because the fire will be rolling.
    8. Remove the steaks from the grill once seared and brush with additional garlic butter. Rest the steaks for 5 minutes and serve.
    I started with a whole beef tenderloin, trimmed it myself - because they are a little cheaper and you end up with extra meat for other recipes too. After I trimmed these filets into thick steaks, I seasoned them simply - but not lightly - and set up my Primo Grill for a two-zone fire.
    Started the steaks out slow on the indirect side and when they hit 115 internal I seared them directly over the hot coals and basted them with garlic butter. I like them medium rare, so I only seared them for 1-2 minutes each side (basting them with the garlic butter the whole time). Took them off, let them rest and these were some of the best steaks I’ve ever cooked!

    That last statement Malcolm made: "Restaurants: I dont think they could do it."
    That right there is why you learn to cook. You pay a LOT of money at a restaurant only to have them screw up your dinner. Malcolm shows you how to do it right for less.

      All his recipes are like BANGERS. I haven't found one yet that wasn't super delicious :) Have you tried his spice mixes? I even found out how to make them for free at home. Love this guys channel!

    Love doing a reverse sear on steaks and chops. Great tip to let the internal temp stabilize or fall before the sear, i haven't waited and they can come out over done, thanks Malcom!

    I grew up with parents that thought a cheap thin delmonico steak destroyed on a george foreman "grill" until it's brown, then dunked in A1 sauce was the way to go. Thank sweet baby Jesus for good friends and the internet for videos like these that show steak being cooked properly makes for the absolute best meal imaginable.

    This guy is a MASTER BBQer... like top level CHEF... world wide. The detail he has in cooking on the BBQ, his flavors, his recipes, his presentation, (for BBQ) He is one of the tops in the world, in my humble opinion.

    Awesome video and right on time. I've got filet thawing in my fridge to cook on my Primo Sunday.     Thank you, thank you, thank you, Malcom. These were AMAZING. I have never been able to cook a really tasty filet, despite buying just about every gadget, remote probe, etc known to man. My stepson turned me onto your website and I have been making a few of your recipes. These filets were hands down the best steak I have ever made. My wife owned a restaurant for 16 years and even SHE was impressed. Again, thank you for all you do. Love watching your videos and learning. I just wish I lived next door.... :-)

    I made some Canadian wagyu filets yesterday for a boys night. I went sousvide then seared over coals. I made a compound butter with fresh garlic, parsley and your AP seasoning. I love that stuff so much. I buy it by the 5lb bag.

    Malcom, there’s a Sicilian sauce/marinade called “Ammogghiu.” Mortar and pestle to grind the full head of garlic into a paste, add fresh mint leaves and grind until the paste turns green, then add only enough olive oil to float the paste, then add solid pack tomatoes without the juice and use the pestle to break those up and incorporate into the previous ingredients. It will blow your mind. Brush any red meat or pork while it’s over the heat. My grandfather wrapped sprigs of rosemary to use as a basting wand.

    I too would say that was one of the finest steaks I seen in a long time. Love the garlic/onion/butter glaze! That loaded bake potato looked great too. I can't eat potatoes any longer, but they sure were good when I did.

    That's a good looking cut of tenderloin. I usually pass on the fillet because it just doesn't have the flavor & I prefer that over mouthfeel.
