Smoked Pork Belly turned into Crispy Mexican-Style Chicharrones

Pork Belly Chicharrones Recipe
INGREDIENTS
- 5lb pork belly
- 1/4 cup Kosher salt
- 2-3 Tablespoons Malcom's Grande Gringo Mexican Seasoning
DIRECTIONS
1. Slice pork belly into 1 1/2" strips.
2. Season with Kosher salt on all sides.
3. Place on a greased wire rack over a foil lined sheet pan.
4. Prepare pellet grill for smoking at 275 degrees. Place pan with pork belly strips on the smoker and cook for 2.5 hours.
5. Remove from grill and drop in 350 degree oil for 2-3 minutes until crispy. Drain for 2 minutes then drop back in the oil for a 2nd fry to make them extra crispy.
6. Cut the chicharrones into bite size pieces and serve with tortillas, fresh guacamole, and salsa for tacos.

I just bought a pork belly because I wanted chicharon, and to look no further you upload the perfect video. I'm anxious to make these now.
I love pork belly, but I was serving it just smoked like a brisket with no crisping of the fat. I found it to be a little on the rich side (those bathroom trips were wild). I feel like you still need to be careful, but crispy pork fat would definitely take it to the next level, and also putting it in something like a taco would help as well instead of eating it as slices like I was. You’re the man Malcolm!!!

Malcomb, I am officially jealous. My Kroger in mid GA does not and never has had "pork belly". Walmart has like tiny strips in certain stores. But no one here believes in "Pork Belly". I am frustrated. I love pork belly, my wife makes it taste sooooo good. But finding fresh local...? I got to drive 2 hrs, and then hope they cut that that day.....Bufords Market, ATL.

what I would like to find is a wire rack to replace those thin ones like Malcolm used to put in the sheet pan. I want it made from 1/4 inch wire and stands at least an inch or two above the pan to allow plenty of room for smoke .
When you were checking the temps, did you need to turn the rack because of how far apart the temps were, or did that not matter?
I make Chicharrones if you let them cool before you deep fry they will crisp up more I use lard!

Are you using pork fat? You should also pour Mexican coke, a few bay leaves, and squeeze the orange and drop it in the fryer. 😊😊

Chicharrón is better than burnt ends. Also you have to leave the skin on in order for it to be chicharrón. The crispy skin with the juicy moist meat is the best thing on the planet.
