Tom’s Cornbread Dressing

  • Tom’s Cornbread Dressing
    Cornbread, baked and crumbled
    4-6 biscuits, crumbled
    3 lb. chicken breasts, cooked and chopped into small chunks
    2 (10.75 oz) cans Cream of Chicken soup, undiluted
    1 cup chopped onion
    1 cup chopped celery
    1 teaspoon salt
    2 teaspoons black pepper
    3 Tablespoons ground sage, or to taste
    4 hard boiled eggs, diced
    1/2 cup butter melted
    48 oz box chicken broth
    Preheat oven to 375°
    Crumble the cornbread and biscuits in a food processor.
    Combine all ingredients in a large bowl. Stir well. Transfer to a greased baking dish. Bake 30 minutes or until the top is browned and the center is firm. DO NOT OVER BAKE!

    I have lived in Nashville area for 50 yrs. I have been using Jiffy cornbread mix for a that time to help make my dressing. I also use biscuits, white bread, buns or any leftover bread. I have been told many times that is the best dressing I have ever had. I also use Poultry seasoning which has sage in it with other spices. I do not pulverize the cornbread. I break it up with my hands and liquid makes it all come together. I think we all just need to find our perfect recipe and enjoy it. No cream soup either just broth and butter from sautéed vegetables. Enjoy your channel.

      I do the same thing. Jiffy and some type of white bread and poultry seasoning. Everyone loves my dressing so I’m not about to change it. Lol

      Me too. Also sage enhances more as it is soaking in the liquid and cooking. Also we use broth from cooking the turkey not out of a carton.

      I always use REAL cornbread, not Jiffy. It doesn't make good dressing. I use Martha White Buttermilk Cornmeal Mix.

    At the age of 80 I am learning to cook as my wife's memory is gone! I stumbled onto "Come Sit At My Table" and Tom's Chili was my first attempt - we liked it so much we are now on our third "re-run"! My absolute favorite people and I can only say "THANK YOU"... I made Tom's Cornbread yesterday in preparation for cornbread dressing today (I could live on a diet of cornbread dressing and cranberry sauce). Again - Thank you Tom and Melissa.

    Tom....I should've known you were a teacher!! You are well prepared, orderly, clear and thorough with instructions and rationale, and your food is visually well-presented!     This is the way my grandmother made it, except she would saute the onions and celery in the butter then add it to the cornbread. She also used poultry seasoning as well. I loved her dressing ❤

      Yes and you gotta add Sage & poultry Seasoning both.....just don't over do either..... experiment , and then choose how much you want to put in it.....(this is how you find a good recipe)

    I recreated a recipe 50 years ago and never thought about putting eggs in it. Never used soup just turkey broth, turkey giblets, butter and of course the cornbread, bread crumbs and sage. A bit of salt and pepper. No one ever complained so to this day, I use the same recipe. However, your recipe looks amazing.and thank you for sharing. 😊

      Your recipe is probably more healthier the way you make it, by adding the canned soup.....it is worse for people but I agree it sure taste good, you don't have to add the can soup....just add broth and season it up well and avoid PROCESSED FOODS when you can....

    I make my dressing pretty much this same way but I use raw eggs in my dressing and I mix it up real well; sometimes I even beat the eggs slightly. That makes the dressing fluffy and light. I don’t use the cream of chicken soup but I use cream of celery soup instead of celery itself. I do use the chicken broth. I definitely agree with the sage. It is not dressing without the sage.

      me too, my me-maw used at least 6 eggs. that's a good idea about the cream of celery. I don't know if that will work for me as if I touch a piece of celery to my lips/mouth I begin to belch.

      I use some raw, well blended, stirred in to thicken PLUS some boiled.
      NO canned soups, just stock/broth, egg, etc.
      IF no raw egg, I prefer my dressing warm but "raw", unbaked. 😉😂🙃

    Tom, I made this tonight as I roasted a chicken last night- lest we get bored with roast chicken and vegetables! I made about a half recipe, homemade cornbread and white dinner rolls, and my husband raved over it! Oh my, so satisfying and comforting! Perfect! Sorry, Melissa, had to add a whole cup of celery(sautéed).

    Loved the story of Tom's first visit to Melissa's parent's home. Surprised to hear it was '93 - you guys remind us of ourselves so much. From your counter tops (exact pattern and material as ours), Tom not wearing shoes while cooking, favorite foods, to your love of the country and church (God), just so many things but then you tell us your first visit was '93 - we have 8 yrs on you guys. Guess we are much older. No matter thanks for a great recipe. I am thinking of trying it this Thanksgiving. God Bless!

      We probably are close in age since we were a little older when we married. Tom's 61 and I'm 56. We will have our 30th anniversary next year. We've truly been blessed in our marriage.

    My recipe is similar but I put a can of cream of chicken and a can of cream of celery. I don’t put sage in mine because nobody likes it. I also use the broth from the giblets and neck and I use the meat from the neck. I also use the broth from the turkey but save out some for the giblet gravy. I use canned broth to make it really moist. It is so good. So very similar. Thanks for reminding me. I think I’ll make up a huge dish and freeze in individual containers. I’m 78 so I like to have something I can fix quickly.

    One thing I do different is cook my veggies before adding to the mix,and I don’t add the hard boiled eggs. But that looks delicious.

      Same here. I put uncooked eggs in the mixture and I don’t use the soup. Plus I do add a little milk. Lots of chicken broth and melted butter (besides what I sauté the veggies)

    This is the way my mother in law made her dressing. She’s been gone for 20 years now and we still use her recipe for dressing. We never had boiled eggs in our dressing growing up. They were in the giblets gravy, but not in the dressing. Because you make your dressing like we do now…..I’m going to subscribe! 😂😂🥰 Honestly, in my humble opinion, it’s the cornbread dressing that makes the meal.     I really enjoyed watching your show on corn bread dressing. I helped my mom back when I was very little she was paralyzed from a Stroke. So she taught me young on how to cook. The only difference is we used Pepperidge farm herb seasoning bread crumbs along with the cornbread it added the herb that was really good and we always use poultry seasoning with the sage. And we always boiled the onion and celery together that would bring out the flavor then and add it to the dressing And she would mix it with her hands like you did with the meat loaf and she always had to taste it. I always thought it was gross that she did that. But now I do the same thing I have to taste it. Thanks for a great video.

    Mine is similar, 1/2 biscuit, 1/2 cornbread-I bake one big hoecake combination. crumble. Then allow to soak in broth overnight or few hrs.
    Poultry seasoning, onion, cream ch soup, 2-3 raw eggs, chopped boiled eggs. More broth if need. Salt & pepper. I learned by helping my MIL. She would make enough for a pan, & Lg & small black skillets. Mixed it up in a dishpan. She didn’t use celery & I don’t like it.
    I keep celery seed on hand but rarely use it.
    Lots of cranberry sauce.
    And gravy for the dressing.
    Yours looks great!

    I'm really enjoying your videos also. You make lots of things that I like, especially the lasagna and the chocolate pie. My grandmother used to make chocolate pie when I was a little girl, and I have been wanting a good recipe. I think I'm going to try yours. Oh, and the dressing looks good also.     I like a little sage. More times than none I use poultry seasoning only. Just depends on my tastebuds that day. But everything else in your recipe is identical to mine. I never use turkey broth bc we prefer the taste of chicken better. Im saying that bc you mentioned turkey bc that’s what you cooked with your future father in law way back when. Thanks for sharing your recipe. It’s always interesting to see how others make their dressing. God bless

    I make my dressing this same way except I’ve never added the cream of chicken soup , I’ll definitely try it this way this thanksgiving ! But I don’t grind my cornbread I just add the chicken broth I boiled my chicken, onion and celery in and stir well the bread breaks down nicely and I also like y’all enjoy more sage flavor !     You can also fry dressing patties, my mama would do it if she made to much dressing or reg cornbread, it was good to have for littles ( and bigones ) to snack on while waiting 😉

    I've had cornbread dressing that is ONLY cornbread and do not like it at all. I have always used a combination in my dressing and it is so much better. My best friend puts spicy sausage in her dressing and it is fantastic. Put a salad with it and it's a whole meal. I have put oysters in mine and love it, but some guests didn't, so no more of that. I have never, ever heard of anyone adding boiled eggs, but since I've loved every one of your recipes that I have tried so far, I am going to be adding them into my next dressing. I look forward to the videos that you and Melissa post. Keep up the great work!

    Cornbread dressing is my favorite! My Granny made a humongous pan for Thanksgiving & Christmas. After she passed one of her daughters took over that task. Now another one of my Aunts makes it.       I made it once and put sage in it. Taste tested and didn't think it was so I put more in and it was overwhelming full of sage. Had to throw it away.😢

    Oh my gosh-I've been binge-watching your channel and I love it! In each video, I find something else we have in common. I'm a Kentucky teacher who loves Brown County, also! As an FYI, if you pour your broth with the spout at the top, it won't do that "clugging" (country term, sorry) as air replaces the liquid in the container. It will pour evenly instead.

    Have never had cornbread stuffing but after this I am definitely going to try this and I love sage! From Western Pa.! Always had bread stuffing and my husband makes stuffing balls.

    My Mom's dressing was made almost the same, except didn't put chicken or turkey in it and I don't remember her using cream of chicken soup in hers but it sounds good. Saving this video. She used chopped eggs, too! She'd make one thick pan of it and another smaller pan of it a little thin, so it would be crispy. That was my favorite!

    Like you my favorite holiday meal includes chicken and dressing as the main dish.Our recipe is almost identical to yours. We don't use biscuits, just corn bread. A lot of sage and very moist. Same recipe for 75 years. Love your channel and your recipes! Thanks.

    My mother was famous for her dressing and I only learned her recipe a year before she passed away. I think yours would taste very much like hers because the ingredients are almost identical. The big difference is she put the eggs in raw. She was very careful that it was very moist - soupy when you put it in the oven so it wouldn't be dry. Also she baked it at 300 for an hour or more. I'm a retired teacher too and I love sitting at your table!

    Hello from the beautiful state of Oregon. This is my first time watching your videos. We LOVE dressing!!! I make a homemade cornbread dressing as well. I've never used chicken in mine. I usually add a lb of mild Italian sausage and chopped up apple. Also, adding eggs was new to me. Yours looks delicious. I just finished watching your video....."chicken dressing." Yummy, you guys 😊

    I use boiled Fresh hen and the broth from it and I sauté my veggies including the Trinity (onion, Bell pepper, and celery). And I use a hint of gumbo file’ minus the sage. Yum yum 🤤

      This is the HEALTHY WAY.....these canned soup are processed and are bad for us....too much SODIUM in it , etc....ingredients we can't even pronounce and have no idea what they are, where if you make your own soup, you know exactly what is in it and will have way less Sodium in it than canned.....

    I saved this recipe to try it out this Thanksgiving. It's currently in the oven right now - wish me luck!
    ... every year I search for and try baking a new recipe bc I'm trying to find the one my mamaw made. All i know is that it had chicken meat and the giblets and hard boiled eggs and cornbread in it, and it was moist, smooth, and so good! I hope your recipe works out for me!

    That’s the way I make mine except I sauté the onions and celery in the butter. Then I mix everything up and put it in the oven thank you for sharing!

    This looks absolutely fantastic. I don’t think I’ve had cornbread dressing.
    I’ve had turkey, mashed, sweet potato casserole, green bean casserole, corn pudding, stuffing, gravy, relish and pickle trays, and other Thanksgiving items but not corn dressing

    Forthe past couple of years my dressing has been awful. Well let me tell you about this year. I found this video and followed your recipe (for the most part) and it was delicious. It was so good,, everyone was raving (literally raving) about it. I was so happy and relieved. My son-in-law messaged me this morning (day after Thanksgiving) to tell me he's glad they took some dressing home. He had it for breakfast. I have now saved this video to my favorites!!     That dressing looks absolutely delicious. Turkey or chicken and dressing is my very favorite food in the world too. Here is a guilty secret. My daughter and I love next day dressing sandwiches with mayonnaise on the bread. Yum yum. Her vegetarian husband looks at us like what the heck? Bread sandwiches? Ha ha.     Thanks so much for sharing your recipe for your dressing it is very similar to mine.I use less sage then you because I add a little Thyme and Rosemary to mine and a bell pepper and saute' all my veggies in a little butter. Tom I'm like you l could eat that whole pan by myself.😅😅😂

    I like to cook my stuffing in muffin pans. Nice single serve portions, and everyone can have crispy edge pieces. Saves on the cooking time, too.

    Your dressing looks so delicious! Some of my family don't care for celery so I pulse it in the food processor. It still has the flavor but they don't even know it's in there.:)
    We also LOVE sage. I recently learned that rubbed sage is about half as potent as ground sage. I still use rubbed but more of it.

      Great idea on pulse the Celery or onions in food processor, that way no one sees them and no one really knows its in there....a friend of mine used to pulse her onions in everything she made because her kids did not like onions in anything....and they never knew the difference when they ate their meatloaf, etc.... I don't like big pieces of onions either, I cut mine small & thin and they cook up and you barely see them in anything I make.....dessiing, soups, meatloaf..... etc..... Even I don't like big pieces of carrots in soup, etc, so I grate my carrots when I make Bean Soup and for Vegetable soup, grate some & leave some in smaller pcs....where there are kids, always pulse them....and they never know....they just leave good flavor in anything you make almost....

    I only eat cornbread dressing and lots of it. Doesn't matter much to me how it's made as long as it's cornbread it will be good. You've taught me to use the canned soap to add moisture and I thank you.
    For your wife:.. I feel the exact same way about eating celery in food (andI l like celery) !
    I have found that if I saute celery down a great deal I actually enjoy it just fine.
    Hooray for sage!
    We live on a small budget and we enjoy cornbread dressing as a main course, all throughout the entire year. It is inexpensive and one of our favorite meals also.

    That looks delicious! I usually do my stuffing in the crock pot. Coming from a large family, like I do, there is never enough stuffing. One thing I never thought of, is using cooked chicken or turkey in mine. I always cook up a package of Maple Leaf bulk sausage meat and drain it. I then mix it in with my bread crumbs. Coming from Ontario, Canada, I have never had cornbread dressing. I will watch your Southern Cornbread video.
