If we will add some extra nutrional value in the basic media then it will become enriched media like blood agar and chocolate agar whereas complex media is a media whose exact composition of all of its ingredients are not known to us. Any media containing nature derived products are known as culture media like blood agar and beef extract

Peptone water isn't defined media. It is undefined media because the exact composition of peptone is not known & varies according to the peptone used or available. Example of defined media would be BG11 that is used to culture cyanobacteria.
