- The King of the puddings. Now, you might have baked a Sticky Toffee Pudding before but have you ever STEAMED a Sticky Toffee Pudding? No? How about if we tell you that steaming your pudding instead of baking it will improve your pudding by 100%? How? Because the gentle heat that you get from steaming means a soft consistent pudding throughout. It will literally melt in your mouth and the softness is so soft its almost gooey. And that's before you've even drenched it in Sticky Toffee sauce. Have we convinced you yet? Serve your Sticky Toffee Pudding with Custard or Ice Cream (or both) and ENJOY!

16cm Pudding Basin
For the Sponge Pudding:
100g Medjool Dates
200ml Water
1/2 tsp Bicarbonate of Soda
50g Soft Unsalted Butter
75g Muscavado Sugar (or Dark Brown)
20g Treacle
1 Egg
85g Self Raising Flour
1/2 tsp Ginger
1/4 tsp Cinnamon
pinch Nutmeg
pinch Salt
2 balls of Stem Ginger
For the Sticky Toffee Sauce:
120g Muscavado Sugar (or Dark Brown)
120g Unsalted Butter
150ml Double Cream
Pinch Salt
1 Spoonful of Treacle
For the Custard! (Creme Anglais)
200ml Whole Milk
200ml Double Cream
1/2 Vanilla Pod (or Vanilla Extract)
3 Egg Yolks
30g Caster Sugar

The way Sally explains the dish really makes you want to try the recipe out because sometimes other TV chefs dont explain it in a realistic way!
Plus she is so incredibly enthusiastic in enjoying eating the pudding with custard, it really makes you want to make the recipe.
I was hoping others would feel this too. I’ve seen steam puds made on telly but I don’t think they ever explain why they do things that way like Sally does.

I made STP for Thanksgiving last year here in USA. None of the 8 people at dinner had ever had it before and we all agreed it was the best dessert we'd ever had in our lives. Now I will use this steamed recipe. Looks amazing.

I did this recipe yesterday and it was amazing!! Highly recommended to anyone who is afraid to try it. My pudding needed approximately 2 hours to bake, but as Sally said, it depends on the size of your pudding basin. I have tried many of your recipes and every single one was a success! Thank you Sally and Jemma for yet another glorious recipe.

I made my first ever steamed pudding a few weeks ago and yes they are amazing! So much better than cake! I’ve done chocolate and Jaffa so far, but sticky toffee is definitely on my list. I think this one will fit in my pudding basin too. Yay!
Fun fact, in Australia we call it sticky date pudding, not sticky toffee pudding.

Steaming desserts are so accessible where ovens aren't usually used too!
Lovely recipe! If you want to make treacle or golden syrup easier and less messy to handle (and have less waste stuck on spoons) use a hot spoon that has been warmed in hot water and then dried off before use. The treacle won't stick to the heated spoon so you get a neat measurement. Helps your tin of treacle go further too. Thanks for your cheerful inspiration throughout these tough times, I'll be giving this one a go on Sunday i think.

It’s also a favourite in Australia. One tip though, often we have two different sauces, one is much thinner which after piercing the cake many times, you pour the sauce over and give it time to soak in and then a separate sauce you pour over when serving.

I just made this for pudding after our Easter Sunday roast. It was delicious and sooo easy. I used a 17cm basin and it took 1.5hrs. It was perfect. Everyone loved it. The plate was practically licked clean 🤤😍
When using sticky things in baking like treacle/molasses/golden syrup etc oil your spoon or measuring cup/jug lightly and it will make getting it out sooo much easier!

Just a helpful hint with treacle or molasses… warm up your spoon under hot water before scooping it. Slides straight off cleanly. Love your recipe.😊

UPDATE; I tried and tested.. it was heavenly. I didn’t make the custard as I opted for 50% less fat pouring cream and I used the same cream in the toffee sauce, I have to watch the calories. Thank you will definitely be making this again. Keep up the great work ladies. 👍

I make sticky toffee pudding and sauce all the time but I have never tried steamed pudding I will be trying this. Black treacle is a most in the sauce and the pudding. Thanks Sally 😀

Absolutely love the recipe. And black treacle is soooo yummy. When I use it, I warm up the spoon, so that the treacle just slides off the spoon 😁
Another good tip is rubbing a bit of oil on the spoon first.

Yes, individual cupcake form just doesn’t do it for me. This recipe however is wonderful, especially as she includes the custard recipe.

Little tip for treacle- if you warm it up before use it’s much easier to get off the spoon and out of the tin!
I finally just made this after wanting to try since this video first came out, and OMG, it’s one of the tastiest things I’ve ever eaten!!!! I live in the US so I had to special order a pudding basin, the treacle, and dark muscavado, and made the stem ginger from scratch, but it was 100000% worth it. Thank you SO MUCH for this recipe!!!!!!

Muscovado sugars along w Golden syrup and the luscious Black Treacle are readily available here in the states on Amazon - I’ve got to get the treacle soon as I have all the other goodies ( I’m in Alaska so I use Amazon a lot ! lol )

Aloha! Very excited I have all the ingredients to make this - including the tin of treacle I packed in our bags when we moved overseas from the UK (along with hundreds of tea bags, Marmite, Oxo cubes, packets of bread sauce, Bird’s custard, etc) 😆🇬🇧🇺🇸
