Here's a tip for the bakers: spray your measuring cups/spoons with baking spray before you try to measure sticky ingredients like molasses. The oil will ensure that the ingredients will slide right out for easy clean up and will ensure you get the full measurement into your mix.

I've been hooked on cooking channels throughout 2020 to remind me of the joy of traveling again, and eating great foods from other cultures. This may be the best channel I've found (plus I grew up Italian in Westchester too so this guy reminds me of my family). That said, growing up Italian, it was always tiramisu, cannolis, pastries, gelato, etc for dessert (which I still love). But my Irish-American husband introduced me to sticky toffee pudding years ago when we met, and I can DEFINITELY say - yes, it's one of the best desserts of all time. When it's done well, it's absolutely DIVINE. Thanks for making this - when we have more counter space (in a tiny Manhattan apartment), we'll definitely conquer this recipe!

Sticky Toffee Pudding is one of my wife's favorite desserts at a local Irish Pub (in Pittsburgh). We haven't gone there since the whole Covid-19 issues began in January. So when I saw your video I knew that I would have to try making it. I served it today as one of her Christmas presents. I had to substitute Agave syrup for the golden corn syrup, and I mixed it all by hand, but it turned out great!. Also, I put cupcake papers into the muffin tins, so cleanup was easier. Thanks. You really nailed this recipe!

Yup, England has historically excelled at desserts. Its where all the investment used to go into since it was a sign of wealth and splendour. Sticky toffee, marzipan, creme brûlée (the two earliest recorded french recipes for it cite it as what they called “english cream” or “cambridge burnt cream”), all English things

Recently discovered your channel and got really inspired by your videos. I am a danish university student kind of living on a tight budget. I already cooked two of your recipes, aglio e olio and the bolognese and was so impressed. Especially the bolognese which has often been sort of boring previously. What I really love about your channel, and what I feel many cooking channels lack is the focus on specific details which make all the difference in a dish. You take your time to explain the do's and dont's of the dish, of each step, and it is extremely helpful when you try to learn to be a better cook. Often they just say: "fry this for 10 minutes", and you're left wondering multiple things and end up screwing it up (sort of). Unlike them, you teach the technique and it doesn´t take you hours either.
So huge applause to you for making something with so much passion, being a chill dude and creating really high quality content. I am sure you will go a long way, you really deserve it.

The 'Golden Syrup' is also called 'treacle' and it is a British thing. But, if you have a grocery with an especially well-stocked baking ingredients aisle (like, they also have orange flower water and rose water), you can find it. It's packaged up in everything from a can the size of a soup can to bottles etc.

175 grams of dates with one table spoon of bicarb of soda added. Soak in boiling water for ten minutes. Doesnt need to be on the hob. Blend 175 grams of sugar 2 eggs 50 grams soft butter and 175 grams of flour. Self raising or plain. Either works the same. Add dates and Blend till till smooth. Cook in silicon mould in bain-marie for 42 minutes at 180 degrees Celsius at the bottom of the oven, this will stop the top crusting a little so the whole thing stays soft. Simplest way to make this pudding and the end product is ridiculously good.

Molasses, like just about all sticky liquids - Treacle, Honey, Molasses, Pancake Syrup - all want you to leave the lid on FOREVER after you have opened it the first time and re-lidded it. The way around the torture of wanting to use the stuff again and therefore having to reopen it is to make sure BEFORE you replace the lid to thoroughly clean the sticky stuff off the rim of the container as well as inside the lid and to not screw the lid down to pre-opening tightness. Like honey in my tea - learned the hard way.

Hot water from the tap on the lid melts the molasses and loosens the lid’s evil hold on the delicious nectar within 😂

Good job. I would have had brown splotches on my hoodie if I was doing the brown sugar/egg mixing... Guess it’s another way to identify you as a professional. This recipe does sound awesome. Thanks for another teaching us yet again.

If you're ever in England the best you can buy from a shop is Cartmel sticky toffee pudding. It's absolutely delicious. And Cartmel is a lovely place itself.

Better still, unsweetened whipped cream to complement and offset the sweetness of the pudding just a little.

I'm British! This looks amazing, you should try serving with double cream (I think that is heavy cream? lol)

We don’t have what you’re thinking about here unfortunately! Just milk, half and half, and heavy whipping cream which you need to whip to thicken. I lived in Australia for 2 years and became OBSESSED with the selection of thick and double creams (and also sticky date pudding) that you can just pour out already thick.

Years ago I was dating a man from GB, and at Christmas he tried to make his mother’s trifle for Christmas. He had a difficult time with the cream for the top. I’m guessing his mom used double cream, but since we don’t have that here, he got heavy cream, and it just didn’t work. 🙁 It was still good though.

Hi, I love your channel. This is the first time I've seen it and I just want to say that I adore Sticky Toffee Pudding. It's so yummy 😋 😍 and easy to make. And I love how you made those little puddings in the muffin pan, they looked gorgeous. The dates add a delicious caramel flavour to this pudding, especially if you use Middle Eastern Medjool dates. Love from Amanda in Melbourne, Australia ❤️ xox

You can crack your eggs into the same small bowl. When you pour them into the mixture, go slowly. Each yolk and its white stay together and you can add them one at a time. Sounds odd, but it works!
Also, golden syrup isn’t a common ingredient in the US; it’s a British ingredient.
