당근 무늬가 귀여운 당근 크림치즈 롤케이크를 만들었어요~
일반적인 당근 케이크의 시트는 잘 부서지고 묵직해서 롤케이크 반죽을 응용해 당근과 피칸, 시나몬 파우더를 넣어 당근 케이크의 풍미가 느껴질 수 있도록 만들어 봤어요.
롤케이크 시트여서 잘 말리고 폭신한 느낌이 살아 있어 더 부드럽고 맛있는 것 같아요.
당근 케이크에는 역시 크림치즈 크림이 맛도 풍성하게 해주고 단단한 크림이라 모양 잡기에도 좋았어요.
당근이 들어가 촉촉하고 구워지면서 달콤한 풍미가 올라와 정말 맛있답니다.

▶틀 사이즈 Mold size : 38cm x 26cm
▶재료
달걀노른자 4개
흑설탕 20g
소금 1g
우유 50g
식물성 오일 30g
바닐라익스트랙 3g
박력분 70g
아몬드가루 10g
베이킹파우더 2g
시나몬파우더 2g
달걀흰자 4개
설탕 70g
당근 50g
피칸 20g
생크림 90g
설탕 25g
크림치즈 170g
레몬즙 3g
장식용 크림 (크림치즈 120g, 설탕 18g, 생크림 60g, 레몬즙 2g)
▶레시피
1. 달걀노른자에 흑설탕,소금을 넣고 섞은 뒤 우유, 식물성오일, 바닐라익스트랙을 넣고 섞는다.
2. 박력분, 아몬드가루, 베이킹파우더, 시나몬파우더를 체 쳐 넣고 섞는다.
3. 차가운 달걀흰자를 휘핑하다가 큰 거품이 올라오기 시작하면 설탕을 3번에 나눠 넣고 휘핑해 뿔이 서는 머랭을 만들고 반죽에 조금 덜어 넣고 섞는다.
4. 섞은 반죽을 본 반죽에 붓고 섞은 뒤 채칼로 자른 당근과 다진 피칸을 넣고 섞는다.
5. 틀에 붓고 평평하게 한 뒤 170도 예열한 오븐에서 23분 정도 굽고 식히고 가장자리를 잘라낸다.
6. 생크림에 설탕을 넣고 휘핑하다가 거품이 올라오기 시작하면 크림치즈와 레몬즙을 넣고 휘핑해 크림을 만든다.
7. 시트에 크림을 바르고 돌돌말아 유산지로 감싼 뒤 냉장실에서 2시간 정도 굳힌다.
8. 같은 방법으로 장식용 크림을 만들어 케이크 겉면에 얇게 바르고 크림에 색을 내 당근 모양을 짜서 장식한다.

20g Brown sugar
1g Salt
50g Milk
30g Vegetable oil
3g Vanilla extract
70g Cake flour
10g Almond powder
2g Baking powder
2g Cinnamon powder
4 Egg whites
70g Sugar
50g Carrot
20g Pecan
90g Heavy cream
25g Sugar
170g Cream cheese
3g Lemon juice
Decorative cream (120g cream cheese, 18g sugar, 60g heavy cream, 2g lemon juice)
