  • Gravy is a warm, comforting, versatile sauce that normally requires a lot of added fat. In this video, Margaret Gallant demonstrates a healthy and delicious gravy alternative using chickpeas. The sauce is velvety, rich, lower in fat, and completely plant-based.
    INGREDIENTS:
    - 2/3 cup chopped carrots
    - 2/3 cup chopped onion
    - 1 cup water
    - 1/2 cup raw cashews
    - 1/4 cup flour
    - 2 tbsp. Chick'n Seasoning (see pantry recipes)
    - 1 1/2 cups frozen green peas
    - 1 can drained and rinsed chickpeas
    DIRECTIONS:
    1. In a saucepan, sauté carrots and onion in a small amount of water.
    2. Blend water, raw cashews, and flour with chick'n seasoning.
    3. Pour blended sauce into the saucepan with sauteed vegetables.
    4. Rinse leftover sauce in the blender with two cups of water and pour into the saucepan.
    5. Cook gravy until it thickens
    Chickpea gravy can be served with rice, noodles, baked potatoes, or be made into a pot pie.
