It is protocol. It is to minimize risk to both her and staff. Also if for some reason they need to secure her airway hands would be in soft restraint to prevent her from pulling tube out.
Even non-psychiatric patients typically get restraints. It's a safety precaution in case the patient starts coming out of anesthesia early, especially since you'll have a few IV's hooked into you, a breathing tube, and catheter sometimes, too. The natural half-comatose reaction is to try and pull those items out and sit upright.
