Max is being semantical. Sam says cook, flip, finish in oven: easy enough. Max is trying to be precise, and there's no precision in cooking. As with cooking time, measurements are also discretionary.

I’ve been noticing max is always trying to make Sam look dumb. This is another example. This is sams cooking show not maxs. Max should do less talking and let sam cook. I get he likes to involve the kids but they’re always arguing with him and trying to make him look dumb. It gets really annoying.

made a quick batch of these as I was preparing boring old mashed potatoes for my wife's family for New Years dinner. Fantastic & I love my new potato ricer. Thnaks Sam!!!!
I was wondering the same thing that Max was questioning. I love how well Sam handled it and that they both worked through it.
Sam was perfectly clear... And also, it really doesn't matter if that pan did sit over the heat for a few minutes before going in the oven... cast iron holds heat so long that it will keep cooking if you set it on the sidewalk. You brown the first side on its own because the second side will get it's color while making contact with the hot pan in the oven. You would do this with essentially any braised dish.
This technique can also be used on pizza that has a lot of toppings as it helps any moisture from permeating through and essentially steaming the dough.
Sam made perfect sense. Max was creating drama where it didn't need to be. Adult children can be a PITA

I definitely understood what Sam meant. I also know why Max kept asking. I think if Max had worded his question “how long do you sear the second side?” Sam could have answered “you don’t, it goes straight into the oven.” But listening to these two going on and on, not understanding why the other isn’t understanding, was pure gold! 😂

Ok, so I just made this exact meal which was incredible... but all the caramelized bits of goodness left on that cast iron... I cooked some diced jalapeno, shallots and garlic, added a small amount of flour and cooked it all out a bit. Then deglaze the pan with white wine, then chicken stock and finished with butter, parsley and a little fresh lemon juice. Made the fn best pan sauce I've ever made. Spicy gravy flavour country 🤤 Thanks for the inspiration Sam. Just awesome. Cheers from Ontario 🇨🇦 guys.

Looks incredible. I’ve found that if you bring leg quarters up to 205 internal temp in the oven it really breaks down the tendons and fat and they come out SUPER tender.
Definitely on Sam’s side with this “Flip and Finish in the oven” disagreement.

Great vid! When I cook chicken, I like to pull the skin back and season as much of the meat as I can, then put the skin back and pop it in the fridge for a few hours. This adds more flavor and acts like a brine as well.

Yeah, based on Sam's play-by-play, I was expecting him to just flip them in the pan and take that immediately to the oven. Not sure what's confusing about that... Either way, great job and keep up the fantastic work guys!
I'm with Sam on this one. The original instructions could not have been more clear. You can't "finish them in the oven" without moving them to the oven, so you flip them.... And then take them to the oven....

Yeah I finally have something I have been making for a while that Sam made. I do chicken quarters like this all the time. I like Sam love thighs and quarters are cheap to buy. i use an applewood rub and add some other spices. Also I turn the broiler on to really crisp that skin and then eat it. I also use the juices in the pan and add to the potatoes or rice that I make to accompany the chicken.
