    Just a suggestion but I am sure you can add your crumbs to a Ziploc bag and mix it that way. My grandmother did it this way with conventional flour and saved her flour and placed the Ziploc bag with flour in the freezer to prevent any contamination etc. I am sure since you stated these crumbs freeze well if you premake your tenders it seems as though the crumbs would stay well in the freezer. That way, you can always have the "flour" (carnivore panko) mixture already made up while not having to create any waste 💕. Hope this makes sense. That way you can add all of the chicken tenders in the bag, shake it up all at once. Cook your chicken and then pop that same Ziploc bag right bag in the freezer for another day.

      It didn't work for me! A lot of the breading balled up and then wouldn't stick to the meat. I'm wondering though if I discovered keto/, carnivore hush puppies! Because it was delicious!!

    I did it! I used my leftover ribeye steak that was cooked medium. Cut into steak finger size. Coated the pieces in egg (I forgot to use the cream), then coated the fingers in your wonderful coating mix. I added my own home made ranch dressing mix for seasoning. Deep fried until the coating turned golden and crispy. I presented my daughter who is a very picky non-keto eater with a sample. Her eyes opened wide with delight. So I offered to split my serving with her . She accepted heartily!

    I just tried this tonight for dinner and all I can say is WOW! Thank you so much for sharing this recipe! Who would of thought adding egg white powder and gelatin to pork ring crumbs would make such an awesome breading for my fried chicken! I honestly feel it is the egg white powder fusing to the meat with the egg wash that helps keep it all together. In any case, this recipe is a definite game changer for sure!

    OMG - I coated chicken wings in this and cooked them in the air fryer last night. They were AMAZING! Tasted like regular fried chicken wings you'd get at Popeye's or someplace. I felt like I was cheating! LOL. I dry brine my wings (salt, pepper and garlic powder) for 8-12 hours in the fridge before I usually cook them in the air fryer, so they were flavored perfectly with the breading on them. I'm going to try seasoning some boneless skin on chicken thighs with Cajun seasonings (spicy fried chicken anyone?) and then breading them with this. I can't wait to see how they turn out. I'm also going to see if the pork rinds, egg white powder and gelatin can act as a bread crumb replacement in meatballs and meatloaf. I'll let you know how it turns out. Thanks so much for all the experimenting and sharing you do!

    THANK YOU!!! In over 20 years of doing low carb, keto and carnivore (sometimes off and on in the earlier years) I never found a breading recipe that was this good. What I always used was half ground pork rinds and half parmesan cheese and was very happy with that but this blows that out of the water, SERIOUSLY! I did fry them in bacon grease too. I used boneless skinless chicken thighs because I already had some defrosted. I dare say that made them even better! I have never made chicken fingers with anything but breasts and this was perfectly juicy and chicken-y flavorful!

    Had something similar for supper last night. My recipe uses whey isolate (now egg white) protein and I do add spices (paprika, garlic, pepper) and I dip in egg only then fry in bacon grease…yummy. I make my own crumbs with plain pork rinds ground in my nutribullet

    Made this last night and it was so good. I do mine like Alton Brown. I have a cooling rack inside a cookie sheet for the battered chicken and the same for the ones coming out of the fry pan. I marinate in pickle juice, drain and pat dry. Then dip in wet, coat in crumbs, pressing the coating into the chicken, then put on the rack in the first cookie sheet. When all the chicken is breaded, I heat my bacon grease, fry and offload onto the second cookie sheet with a rack, which is keeping warm in a 250 degree oven. I added some Redmonds seasoned salt and lots of black peper to the breading mix. Served with G Hughes sweet and spicy bbq sauce.

    This is amazing. In my pre-LC/Keto days, I used to just bread chicken in flour and pan fry. It made the most amazing drippings that were almost as good as the chicken itself. I made this last night for dinner and it's definitely the closest I've come to duplicating it since giving up grains. (I did pan fry it.) It has a bit of a chewy texture and sticks to the chicken (or whatever you want) as well as white flour. I will be using this as a breading for other things as well. Thanks so much for this wonderful idea!

    Yum, I'm definitely going to try this. I liked Porking Good crumbs but they were too expensive for me to use regularly. So I get plain pork rinds from Aldi and blitz them in my food processor. I keep a large container on hand at all times. My husband even uses them for his fish fillets.

    These are so delicious! I made them the first time fried in bacon grease in a pan….and I couldn’t stop eating them! I am currently cooking a batch in the air fryer just to try both ways! My husband was raving about them…he is not keto😁

    Nice idea I guess, but in my 2 years of frying with pork rind crumbs, I have never needed to add gelatin and egg whites to it. It’s perfect on its own.

    I found Parmesan crumbs by whisps. Found at my grocery outlet. Used in my meatballs. Pretty good. I might try them for breading. Will also try Nili’s recipe.

    This is the best flour to make fried chicken EVER! OMGosh everything I tried from protein powder to parmesan to pork rinds alone I hated and I don't like to taste pork rinds and in this recipe amazingly I do not! Wow! My other concoctions would burn and dirty up my oil the mixture held on to the chicken. Your recipe is perfect. I actually got it right on the first try! Thank you so much!

    This is fabulous! I use my egg white bread crumbs and pork rinds similarly with this same result, however, this is much easier if I don't have the egg white bread crumbs prepared.❤️❤️

    This is for me. My husband likes a Latin type of breaded fried steak and loves fried fish. I would love fish tacos on egg life wraps...this looks great. I have used pork rind crumb with unflavored protein powder that worked okay but this looks fantastic.

    Dearest Nili....I just made country fried steak with your breading recipe and it is so delicious and tender you would never know the difference from the traditional recipe...I even made a quick pan sauce...drained off the excess oil....scraped up the crummies from the pan threw in some onion....a few mushrooms and two tablespoons of cream....Im telling you I feel like a gourmet cook and keeping ketovore all thanks to you and your recipes.....please put them all in a book....I would buy it....GOD bless❤💐❤

    This breading is amazing. First saw it on ketogenic woman and followed her link here. Yummy. Just made halibut fish sticks and no one believes it's carnivore. Friend said "we're not judging you, you can admit to us it's got flour in it". Love this stuff, going to try scotch eggs with it next.

    Congratulations Ms. Indigo! I just finished making your Protein Breading Recipe for the first time. And you nailed it!!! I had to make some adjustments based on what I had on hand. I use the breading on chicken livers and gizzards. The first winning event was that the breading did not separate from the meat in the grease, yeah. Then it cooked nice and crispy and taste expected. The breading did not hold grease like wheat flour can. I fried them in my cast iron skillet. My adjustments were I had to substitute lard for bacon grease, for the egg wash splash of milk I mix Buttermilk powder and water to make the milk 1Tsp each. And for the pork rinds I already had made my own from a bag of plain pork rinds . This recipe will totally be my go to forever. I had gotten so used to frying "bare" meats. The other great event is that this recipe was a success for me on the very fist try! So different from all the fails with the early Bread recipes ha!, ha! This is Keto, Carnivore, simple, cheap and easy.

    I've been keto for almost 5 years and tried many many variations for breading. This literally knocks the very best of them completely OUT OF THE PARK. I tried it 3 ways.
    1. The way you dipped in egg mixture then the "breading"
    2. Skipped the egg mixture and straight in the breading
    3. Shook the chicken in a bag with oat fiber, then the egg mixture, then the breading mix.
    1 and 3 were indiscernible between them. 2 was still so good and would totally work in a pinch.
    This is amazing!

    I tried your breading for my fish I fried was so good. I added 2 TBS of lemon pepper and was so delicious. It tasted like the Andies fish fry. So so good. Can't wait to try on other foods. Thank you for all your hard work for us out here on our journey to being healthy.

    I plan on trying this as soon as I can. I saw the fish 'short' and wondered if it would stick to Kahlrabi, Jicama or Zucchini fries. Mmmm, fish and chips.     Perfect timing, I was preparing to air fry a few wings for myself using pork panko and parmesan as a coating when I saw this. It was perfect, and you don't even need to mess with egg wash. I left my wings dampish and then tossed them in the coating. Yum! Did it again tonight with pork riblets using salt & vinegar seasoning. So easy and quick and the coating is not as fragile as the pork/parmesan one. A definite winner!

    This is a great breading idea for eliminating grains and nut flours for those who can't eat those items. I would recommend the frying method over the air-fryer. I did try both and the chicken and the breading stuck like glue to the air fryer basket and I did use oil to coat the grating. So I won't try that again. It may work differently in a different air-fryer, but this was my experience with the Cuisinart which has a grate like basket. It took lots of soaking and scrubbing to clean the breading off the grates. I don't have this problem with other foods. Let me know if anyone has tried something different using this breading with the chicken tenders. Much love; thanks for the recipe.

    Always prevent from overheating bacon grease it will become oxidized at higher temperature. If you need to use high heat either discard or save as a separate collection from fresh grease.

    ...thank you, I followed your breading recipe and my chix temders came out GREAT, they browned nicely and were crispy in the oil. I bought a pack of 6 tenders and cut your dry ingredients in half, had plenty to do a few onion rings, yum. What amazed me was the fact that I cut up some of the chix into pieces and mixed them in a salad and to my surprise the breading STAYED on the chix pieces even when I mixed in my salad dressings.
    Again a big thank you for the time and effort you put into getting it RIGHT 😊

    Wow, you've really done it this time! I made chicken nuggets from finely chopped rotisserie chicken breast, mozzarella, parmesan, mayo, and egg. After shaping them, I breaded them (didn't need egg wash) and pan-fried. They were great! The really good news, they crisped up nicely the next day in the air fryer. 😊

    Well this was off the chain! I tripled recipe and used chicken boneless skinless thighs. Pan fried so delicious and crunchy. I was thinking because it doesn’t taste like pork rinds at all…..maybe fried shrimp or oysters? So delicious thank you again for all your hard work, scientific experiments too!

    Indigo all I can say is holy cow!! I used this to fry up some soft shell crabs, shrimp and cod. Light and crispy. It didn’t soak up any oil. I like this better than non keto. I can’t say enough about it. Thank you for your wonderful discovery! Seriously life changing. Keep up the great work.

    Just mixed this up (YOUR great creation) I used my own chicken flour (a LOT less expensive to make it yourself!). Anyway, I love this dredge because it doesn’t BURN as fast as nut based dredges.     Tried this tonight with chicken strips. What a winner this breading is. I lightly coated mine but most of it stuck, very little was left behind in the oil. I added some ranch seasoning mix that I have that doesn't have any corn starch in it...and we all loved the results

    I made this breading.
    I used it on venison steaks , I lightly pounded them, seasoned them and fried them in a cast iron pan .
    WOW , they turned out great!
    Want try this as a fish dusting.
    As far as the egg dipping , I never was a fan of that , but I did try brushing the meat with a little egg mixture to keep it lighter....it worked .
    Perhaps another type of moistener would be better , I'll try something else to tweek it my way!
    Anyway I love it, best our there for integrity and taste

    This is seriously AWESOME! Saw it today, made it today! They are beautifully golden and crispy and that breading really ADHERES! You don’t have to be careful with them at all. I deep fried mine in my fry daddy for 5 minutes. I sliced two large breasts into tenders and was able to bread around 1.5 pounds of tenders with one batch of the breading. I thought I had plain pork rinds but I didn’t so I used the PORQ salt and pepper pork rinds and crushed them with a mallet. I didn’t add anything else to the breading but I did salt my tenders before breading. Made a copy cat Caines sauce to go with them. We’ll make it again and again! Thank you NILI!!! I’ve tried at least 6 other tender recipes and this has been the best one.

    okay....so you basically have tremendous success because by coating those tiny ground pork rinds thereby eliminating all problems that the excess grease creates. they look delicious and after reading the comments i'm getting the staples i need to make it regularly!

    it was delicious! tips: in instant pot air fryer, pre-spray tray/basket, and do NOT try 2 layers as bottom layer doesn't fully cook (with veggies i can air fry 1 layer on silicone sling with 2nd layer on air fry tray on top... but sadly not with chicken). 2. the amount of egg bowl was enough for 4 chicken boobs, but 1/2 wau thru breading, my dry bowl had clumped up and stopped sticking to chicken, so maybe double dry ingredients and split into 2 bowls, so half way thru you can switch to 2nd dry bowl.

      update: i tried idea of doubling dry ingredients and splitting into 2 bowls, and it still wasn't enough to bread 2 boobs per bowl! bah! it stopped sticking to chicken after about 1.5 boobs. I think it will take THREE times the dry ingredients, even tho the single amount of wet bowl ingredients is more than enough for all 4.

    Thanks for this great recipe. Much nicer than just pork rinds. I used whole egg powder as I didn’t have egg white powder left, and it works great. No eggy taste, and the fish I made crisped up beautifully. Thanks again.

    Omg, I used this for porkchops, it was the best tasting ever. I deep fried them in bacon grease. Bteading stay on the whole time. Thank you so much. Can't wait to make other things like chicken fried steak. All my chicken and fish recipes will be done with this bteading.

    I'm glad you found a breading that actually sticks to the food. But, my favorite form of frying is beer battered. Do you think it could work if you tweaked your recipe a little for a wet batter to work?

    Perfect first try. Used powdered egg for wash. Little thicker, so think that may help. Best chicken strip ever!

    I love the look and sound of LMNT, however it’s virtually impossible to buy here in the UK unless you rob a bank. 😩

    Just made chicken tenders with your breading recipe
    Omg delicious I’m so happy I can eat breaded chicken again and not feel guilty. Prep was just as easy as when used regular breading actually the crisp and flavor is better with your recipe. Thank you Nili ❤

    LOVE love Love this coating....works great, taste great, it's filling, and it reheats well. We have made it 3 times this week, and plan to make a large batch for the freezer. My husband double coats it for a really crispy result.❤Thank You!

    This coating is delicious! I was amazed at the crispiness! I tried it on chicken wings. Sadly, the chicken wasn't fresh and I had to toss it, but not before I removed as much breading as possible. Then I ate the breading by itself! I tried making a hush puppy with some leftover breading and egg wash, and it worked great. I'm going to try it on fish, too. Thanks for this!

    I love this recipe! I actually make this up and keep it in my pantry. It works exactly as you stated it does not become a breading sleeve that slides off. It is great. I’ve used it in deep frying. I’ve used it in the air fryer, I’ve used it, not in the oven but I’m sure it will work fine in the oven because I don’t use the oven as much as I used to. But this is a winner, winner chicken dinner! Thank you so much thanks stay crispy and yummy and you could put whatever seasoning do you like in it

    I do similar, but I've always done an egg wash first then dip in breading. It stays on and crisps up nice!
    Edit: ahh, I see you did use and egg wash. Also, don't move chicken around until crust forms, it should release easily. With aluminum pans, heat the pan first then add oil. Something about the pan expansion with heat, then adding oil after heated helps keep things from sticking. I love my new All Clad that I got for Christmas. But I've had a couple pans from USA Pans for a long while. Takes getting used to it.
