Funny story, while at their distillery I had sampled their product and didn’t care for it. There was a guy standing next to me and he asked me what I thought about and I was very truthful and told him I wouldn’t buy a bottle because it wasn’t to my liking. Come to find out that he was one of the owners. 😂😂🤣🤣

It’s because it doesn’t cool and breathe through the wood to mellow the harsh taste. Kinda of like the New England bourbons which are very light in taste. They don’t expand into the wood as much. The middle of the us like Kentucky get hot and then cool which gives it a better expansion and contraction.

As a mostly Scottish Malt and Irish Potstill fan, bourbon tends to be too simple for my palate. Not saying Bourbon is bad, but far from memorable or exciting when compared to my usual picks.
Texas, specifically Balcones is the exception. I prefer their Rye and malt, but I'm guessing the combo of Texas and potstills is what it takes to get Bourbon towards my palate.
But I'm always open to suggestions when it comes to a more complex and interesting bourbon in general.

I love bourbon. And I don’t like garrison brothers at all. Just my personal preference. I way rather prefer “TX” whiskey if I’m drinking Texas juice. I tend to feel like most Texas whiskeys are young because they age so fast in the heat. The heat puts off an extremely smoky flavor that can be off putting. I’ve seen a lot of under 4 year bottles come out of Texas, and I think because of the weather there it really limits them in outdoor aging facilities because it’s so hot. It tends to make their whiskey feel a little bit young and thin and very wood forward. Just my opinion.
