How to make the most delicious moist Jamaican Easter Bun

    Ingredients:
    4 1/4 cups all-purpose flour
    1 cup dark brown sugar
    1/2 cup light brown sugar
    1/2 cup dark molasses
    1 cup stout beer (such as Guinness)
    1/3 cup wine
    1/2 cup fruit preserve
    1/4 cup raisins
    17 Maraschino cherries cut in half
    1/4 cup chopped candied ginger
    1/4 cup chopped candied citrus peel
    1 teaspoon baking powder
    1/4 tsp baking soda
    2 tsp browning
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground allspice
    1/2 teaspoon ground cloves
    1/4 teaspoon salt
    2 orange zested
    1/4 cup melted butter
    3 large eggs, beaten
    1 teaspoon vanilla extract
    1 teaspoon almond extract, optional
    1 tablespoon rum (optional)
    1 1/2 tablespoon rose water
    Glaze:
    1/4 cup light brown sugar
    1/4 cup water
    1/4 cup Guinness stout
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1/2 teaspoon vanilla extract
    Instructions:
    • Preheat your oven to 325°F (160°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
    • In a large mixing bowl, sift together the flour, baking powder, cinnamon, nutmeg, allspice, and cloves. Add in salt.
    • In a separate bowl, combine the raisins, candied ginger, and candied citrus peel. Toss with a tablespoon of flour from the dry ingredients to coat.
    • On very low heat, add butter. Once the butter is melted, stir in sugar, stout beer, and wine. Remove from the heat and cool. Mix together the molasses, browning vanilla extract, almond extract, fruit preserves, rose water, orange zest, and beaten eggs until well combined.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
    • Fold in the fruit mixture until evenly distributed throughout the batter.
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula or spoon.
    • Bake in the preheated oven for 1 1/2 hours or until a toothpick inserted into the center comes out clean.
    • If the top of the bun starts to brown too quickly, cover it loosely with aluminum foil.
    Making the glaze:
    • In a saucepan, combine brown sugar, stout beer, water, cinnamon, nutmeg, and vanilla extract. Cook over medium heat until the sugar has dissolved and the mixture has thickened slightly, about 2-3 minutes.
    Glazing the bun
    • Once the bun is out of the oven, immediately brush the top with the warm glaze while it's still hot.
    • Allow the bun to cool in the pan for 10 -15 minutes, then transfer it to a wire rack to cool completely.
    • Once cooled, slice the Easter bun and serve it with butter or cheese, as is tradition in Jamaica.

    This recipe looks like the one my mom used to make for Christmas when we were young, it's called 'fruit cake' here.
